Position
We are seeking a Chief Operating Officer (COO) to oversee the daily operations of our multi-property portfolio. This is a hands-on leadership role focused on operational excellence, financial performance, employee engagement while maintaining our signature service and brand standards. This position reports to the CEO.
Role Overview
The role is based in Los Angeles and requires daily on-property presence across the clubs. Occasional travel to New York properties is expected.
The COO is responsible for leading property-level operations across all San Vicente Clubs locations, ensuring each property achieves its business, brand, and member experience objectives. This position requires an operations-driven executive who thrives in the field—working side-by-side with General Managers, Executive Chefs, and key department heads to drive performance, profitability, and quality.
Key Responsibilities
Operational Leadership
- Oversee daily operations across all San Vicente Clubs properties, ensuring brand consistency, service standards, and operational discipline are met or exceeded.
- Partner closely with General Managers, Chefs, and key operations leaders to drive guest satisfaction, member engagement, and employee engagement.
- Lead continuous improvement initiatives—enhancing SOPs, service design, and operational efficiencies across the member journeys.
- Foster a culture of accountability, mentorship, and excellence throughout the organization.
Financial & Business Performance
- P&L accountability for all properties, including cost control, and revenue optimization.
- Monitor property-level financial metrics and KPIs; proactively identify and address performance gaps.
- Ensure proper staffing alignment based on business volume, optimizing labor while maintaining outstanding service quality.
- Drive profitability through operational efficiency.
Property Condition & Brand Standards
- Ensure each property is maintained in impeccable physical condition, reflecting San Vicente’s standards of design, craftmanship, and presentation.
- Oversee maintenance, capital projects, and renovation work in partnership with CEO and owner.
- Enforce compliance with health, safety, and regulatory requirements across all jurisdictions.
Talent & Culture
- Assist in recruitment to develop, and retain high-performing operations leaders across the portfolio.
- Build leadership capability through coaching, structured development, and clearly defined performance expectations.
- Champion a positive, collaborative culture that reflects the brand’s values and creative spirit.
Strategic Growth & Alignment
- Partner with Ownership and the Executive Team on short and long-term strategies
- Translate corporate objectives into actionable plans for each property.
- Act as a key liaison between ownership and property teams, ensuring alignment on goals, standards, and performance metrics.
Qualifications
- Minimum 10 years of senior-level hospitality operations experience, including multi-property restaurant or club management.
- Proven success overseeing high-volume, high-touch operations in Los Angeles or New York City markets.
- Experience in both entrepreneurial and corporate hospitality environments, with the agility to move seamlessly between hands-on management and strategic oversight.
- Deep understanding of P&L management, financial modeling, labor optimization, and guest experience strategy.
- Strong leadership presence with the ability to inspire, train, and hold teams accountable.
- Exceptional organizational, communication, and problem-solving skills.
- Must reside in or be willing to relocate to Los Angeles and be present at properties daily.
