THE OPPORTUNITY
Quello is a forthcoming fine dining destination in Greenwich, Connecticut — a restaurant built around disciplined hospitality, a confident culinary point of view, and the belief that a great meal is the sum of a thousand small decisions made well.
We are looking for a Service Director to be the guardian of service quality at Quello — the person who sets the tone on the floor, protects the details, and makes sure every guest leaves feeling like the night was built for them. This is a founding role, working closely with the General Manager and ownership to define what service means here.
The right candidate lives on the floor, not behind a desk. They bring a deep love of hospitality, an eye for the small things, and the instinct to develop people into a team that holds the standard on its own.
WHAT YOU'LL OWN
Service Culture & Floor Presence
- Set the tone for service every shift. You are the standard the floor looks to.
- Lead from the floor through the full service, reading the room and adjusting in real time.
- Build a culture where hospitality is personal, informed, unhurried, and precise.
- Lead pre-service lineups that sharpen the team on the details that matter that night.
Hospitality Standards & Consistency
- Own Quello's service standards and make sure they hold every shift, every table, every guest.
- Protect the details: pacing, sequencing, table touches, and the small things that separate good from exceptional.
- Walk the room constantly, catch what is slipping, and correct it before the guest ever notices.
- Keep service consistent across the main dining room and private events — no second tiers.
Guest Recognition & Experience
- Build and run a guest recognition program: the regulars, the names, the preferences, the occasions.
- Look after VIPs and special requests personally, and set the standard for how the team does the same.
- Own guest issues on the floor and turn them around in the moment.
Training & Staff Development
- Lead training and ongoing development for captains, servers, hosts, and support staff.
- Build and maintain service standards documentation and training programs for all FOH roles.
- Coach in the moment, run skills sessions, and develop the next level of floor leaders.
- Partner with the beverage team so every server can speak to the list with confidence.
Working With Leadership
- Partner closely with the General Manager and ownership to shape and protect the service vision.
- Report on service quality, guest feedback, and team development.
- Align front-of-house and kitchen on the details that make service feel seamless.
WHAT WE'RE LOOKING FOR
- 4 years leading service in fine dining or upscale-casual environments with serious food and wine programs.
- A reputation for service detail. People notice the difference when you run a floor.
- A natural host — guests gravitate toward you, and you make every table feel like your best table.
- A track record of training and developing service teams that hold the standard on their own.
- Strong wine knowledge; certification (CMS, WSET, or equivalent) is a plus, not a requirement.
- Comfort with reservation systems (SevenRooms, Resy, or equivalent) and POS platforms (Toast, Aloha, or equivalent).
- Composure under pressure. Greenwich diners are experienced and exacting — you are too.
- Pre-opening or opening-team experience is highly valued.
