THE OPPORTUNITY

Quello is a forthcoming fine dining destination in Greenwich, Connecticut — a restaurant built around genuine hospitality, exceptional food, a best-in-class wine program, and the belief that memorable dining experiences are created through thoughtful attention to every detail. Our goal is simple: to create a place guests return to again and again because they feel cared for, inspired, and delighted every time they walk through the door.

Led by acclaimed restaurateur Joe Campanale and Culinary Director Abram Bissell, Quello represents a rare opportunity to join an ambitious restaurant from the ground up. A Food & Wine Sommelier of the Year and owner of the celebrated Brooklyn restaurant Fausto, Joe has built his reputation on exceptional hospitality and world-class wine programs. Abram, a two-Michelin-starred chef, brings experience from some of the country's most acclaimed kitchens.

Together, Joe and Abram are building a restaurant defined by outstanding food, wine, and hospitality — one that aims to become a dining destination for Fairfield County and beyond.

We are looking for an Assistant General Manager to be the General Manager's right hand — someone who leads from the floor, holds the standard shift after shift, and keeps the dining room running while the GM builds the bigger picture. This is a founding role on the team that will define Quello from day one.

The right candidate brings the same operational rigor and genuine warmth we expect of the GM, the judgment to run a service on their own, and the maturity to lead inside someone else's vision.

WHAT YOU'LL OWN

Daily Floor Leadership

  • Run the dining room day to day alongside the General Manager, and take the lead in their absence.
  • Own the floor during service — set the pace, read the room, and step in wherever the night needs you.
  • Lead pre-service lineups that educate, energize, and align the team on the night ahead.
  • Keep service sequencing, table management, and pacing tight from the first cover to the last.

Service Standards & Guest Experience

  • Hold every shift to Quello's standard: personal, informed, unhurried, and precise.
  • Make sure every guest interaction reflects the level Greenwich expects, and fix what falls short in the moment.
  • Partner with the kitchen to keep front-of-house and back-of-house communication clean and service cohesive.
  • Recognize regulars, look after VIPs, and resolve guest issues before they reach the GM.

 

 

Staff Training & Development

  • Support hiring, onboarding, and ongoing training for captains, servers, hosts, and support staff.
  • Coach in the moment and reinforce the standards the GM sets, so they hold whether or not leadership is watching.
  • Help build and maintain training programs and service standards documentation for all FOH roles.

Opening & Closing Management

  • Own opening and closing procedures so the room is ready before the first guest and reset right after the last.
  • Manage shift readiness: stations, side work, cleanliness, and the details that make a room feel finished.
  • Complete end-of-night reporting and hand off cleanly to the General Manager.

Communication & Coordination

  • Keep front-of-house, kitchen, and management aligned day to day.
  • Carry the GM's direction to the team clearly, and bring the team's needs back up.
  • Step into scheduling, ordering, and administrative support as the GM directs.

WHAT WE'RE LOOKING FOR

  • 3 years of front-of-house leadership in fine dining or upscale-casual environments with serious food and wine programs.
  • A track record of running strong services and developing service teams in competitive markets.
  • Real floor presence. Guests feel taken care of and staff know the standard when you are on.
  • Solid wine knowledge; you can guide a table and back up the beverage team. Certification (CMS, WSET, or equivalent) is a plus, not a requirement.
  • Comfort with reservation systems (SevenRooms, Resy, or equivalent) and POS platforms (Toast, Aloha, or equivalent).
  • The judgment to lead on your own and the humility to support the General Manager's vision.
  • Composure under pressure. Greenwich diners are experienced and exacting — you are too.
  • Pre-opening or opening-team experience is highly valued.
