A highly acclaimed, Michelin-starred Japanese fine dining restaurant is seeking a General Manager to lead one of the city's most respected dining experiences. This intimate omakase concept has earned numerous accolades and is recognized as one of the premier destinations for Japanese cuisine in New York.
Ownership is seeking a full-time General Manager who can take true ownership of the restaurant, strengthen systems and organization, and provide thoughtful leadership for both the front-of-house team and overall operation.
The ideal candidate comes from a fine dining background and is deeply hospitality-driven. Japanese language skills are not required, but an appreciation for Japanese culture and omakase dining is highly valued.
Strong beverage knowledge, particularly in wine and sake, is considered a significant plus, although ownership is open to candidates eager to continue learning and developing their expertise.
Schedule & Lifestyle- Five-day workweek
- Sundays always off, plus one additional weekday
- Typical schedule approximately 2 PM–11 PM
- Less than 50 hours per week
- Restaurant closure for approximately two weeks in August
- Holiday closure from late December through early January
- More than four weeks annually with restaurant closures
- Lead daily operations with professionalism and composure
- Mentor and develop the FOH team
- Foster a culture of hospitality and accountability
- Conduct team meetings and maintain clear communication
- Scheduling and payroll oversight
- Recruitment, onboarding, and training
- Communication with ownership and reporting
- Reservation management and guest correspondence
- Ensure compliance with DOH and SLA regulations
Maintain and develop a world-class beverage program including:
- Sake
- Champagne
- White and Red Burgundy
- German Riesling
- Premium tea selections
Responsibilities include:
- Inventory management
- Vendor relationships
- Beverage education and staff training
- Menu updates and pairing support
- Cultivate exceptional guest relationships
- Maintain guest preferences and CRM systems
- Deliver highly personalized service experiences
- Support ownership and culinary team with operational projects as needed
- 3 years of experience as a GM, AGM, Beverage Director, or similar leadership role
- Fine dining experience required
- Michelin-starred experience or equivalent luxury hospitality preferred
- Strong knowledge of wine and beverage programs
- Experience with Tock, Toast, Excel, Google Suite, and similar tools
- Leadership, emotional intelligence, and calm under pressure
- Passion for Japanese cuisine and hospitality culture
- Certifications such as CMS, WSET, or Sake Sommelier are a plus
- Authorization to work in the United States
- Take ownership of the operation
- Improve systems, organization, and inventory controls
- Modernize operational processes
- Enhance guest relations and CRM systems
- Build stronger structure and efficiencies across the business
💰 Base Salary: $110,000–$125,000
