Workforce Management Specialist
Department: Operations

Location: Hybrid – based in Greater Boston area with regular presence in restaurants and e-commerce production facility
Overview
Mortadella Head is a fast-growing Italian-American brand with both brick-and-mortar restaurants and a booming nationwide e-commerce division shipping frozen comfort food across the U.S. We are looking for a Workforce Management Specialist to help optimize our labor performance, control costs, and ensure compliance across all locations and departments.
This role will play a key part in forecasting labor needs, managing schedules, monitoring real-time labor data, and enforcing policies that keep our business efficient, compliant, and people-focused.
Key ResponsibilitiesLabor Forecasting & Scheduling
- Develop and manage labor forecasts for restaurants, catering, and e-commerce production.
- Use historical sales data, promotions, and seasonality to predict labor demand.
- Coordinate with Managing Partners, Kitchen Managers, and E-commerce Production Managers to build optimized schedules.
- Identify labor gaps or excess and propose solutions in real time.
Labor Cost Control
- Monitor daily and weekly labor percentages across all business units.
- Ensure restaurants and the e-commerce kitchen hit target labor cost percentages.
- Work with management to approve or deny overtime requests.
- Implement and maintain a Voluntary Time Off (VTO) program to reduce unnecessary labor spend.
Compliance & Timekeeping
- Ensure all labor practices comply with Massachusetts wage and hour laws (including overtime, breaks, and minor labor rules).
- Audit timecards and enforce accurate clock-in/clock-out procedures.
- Train managers on proper documentation and compliance standards.
- Identify and address any potential labor law violations before they become issues.
Systems & Reporting
- Manage and maintain workforce management software.
- Create dashboards and weekly labor performance scorecards for leadership.
- Develop and improve reporting systems for real-time labor tracking.
- Partner with accounting and payroll to ensure accurate labor cost reporting.
Optimization & Training
- Develop standard labor procedures and training modules for managers.
- Train managers to understand labor metrics, productivity goals, and compliance requirements.
- Recommend process improvements to increase throughput without increasing labor hours.
Key Performance Indicators (KPIs)
- Labor cost % within target range for all business units.
- Reduction in overtime hours.
- On-time, compliant scheduling completion rate.
- Improved labor efficiency (sales per labor hour / trays per labor hour).
- Compliance score from internal audits.
Qualifications
- 3 years experience in workforce management, scheduling, or labor analytics (restaurant or manufacturing preferred).
- Deep understanding of labor laws and compliance requirements.
- Experience with workforce management systems.
- Strong Excel/Google Sheets and data analysis skills.
- Excellent communication and training ability.
- Strong problem-solving and process improvement mindset.
