Maurice Pastries, Inc. is a well established French pastry shop, We are now seeking an experienced assistant pastry chef for our wholesale operation at our Alexandria location; This is the perfect opportunity for a Baker/pastry chef who wants to apply his or her skills to the real baking from scratch and learn how to manage to produce custom desserts. Candidate should have 8 years minimum of commercial baking experience Position title: Pastry Chef Kitchen responsibilities to include, but are not limited to: ü Daily opening procedures: checking messages, emails, fax, online, updating orders ü Mastery of the accounting / ordering system and associated codes ü Answering emails throughout the day as needed, clarifying with chefs / customers ü Knowledge of the menu both past and present ü Occasionally, taking orders from customers, clarifying orders with customers ü Seasonal menu development and implementation, sourcing and costing ingredients ü Daily kitchen staff management and overseeing production to reduce errors and maintaining quality control. ü Special request tastings for customers. ü Tasting production and photos for upcoming functions ü Coordination with the bakery Manager to be as efficient as possible ü Being aware of kitchen inventory, coordinate with our purchaser to maintain everything in stock Baking skills and Knowledge: ü Tempering chocolate, Other requirements: ü Strong knowledge of Paint, Word, email etiquette 6 days a week, : 5:30am to 2:30pm Monday to Saturday, Bilingual English and Spanish,
