Job SummaryThe Certified Dietary Manager (CDM) oversees all aspects of the dietary department. This role balances kitchen leadership with clinical nutrition coordination, ensuring our residents receive safe, delicious, and medically appropriate meals. The CDM manages dietary staff, controls inventory, ensures strict compliance with Missouri Department of Health and Senior Services regulations, and collaborates closely with our registered dietitian. - Manage day-to-day operations of the kitchen and dining rooms, ensuring food safety, high quality, and optimal temperature control.
- Hire, train, schedule, and supervise dietary aides and cooks, fostering a supportive, efficient kitchen environment.
- Conduct resident nutritional assessments upon admission and during routine care planning, documenting dietary restrictions, preferences, and caloric needs.
- Collaborate with the speech therapy and nursing departments to implement modified diets, including mechanical soft and pureed textures.
- Order food, supplies, and equipment while managing the dietary department budget.
- Maintain clean, sanitary kitchen environments adhering to CMS and Missouri state regulatory standards.
- Participate in interdisciplinary care team meetings to represent resident nutritional wellness.
Qualifications and Requirements
- Certification: Active Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP) credential required.
- Experience: Minimum of 2 years of culinary management experience, preferably within a long-term care, skilled nursing, or assisted living facility.
- Knowledge: Strong understanding of CMS regulations, Missouri long-term care sanitation codes, and therapeutic diets.
- Skills: Proficient in food service inventory management, staff scheduling, electronic medical records (EMR) charting, and menu planning software.
