General Manager – Mike’s Red Tacos (Minnesota Launch Team)
Join the team bringing one of the fastest-growing concepts in the country to Minnesota. Mike’s Red Tacos, originally founded in San Diego, California is expanding to the Midwest, with its first Minnesota location opening in Fall 2026. Our franchise group is proud to be the first to sign a development agreement with the brand, making this a rare opportunity to be part of a market launch and help build something from the ground up.
Position Overview
We are seeking an experienced and driven General Manager to lead our inaugural Minnesota location. This is a hands-on, kitchen-focused leadership role centered around execution, team development, and operational excellence. The concept is highly focused on authentic birria-based menu items, so strong back-of-house experience is essential.
The exact location is currently being finalized and will be announced within the next two weeks. The restaurant will be located within a 30-minute drive of the Minneapolis–Saint Paul metro area.
Key Responsibilities
- Oversee all day-to-day restaurant operations with a strong emphasis on kitchen execution and food quality
- Lead, train, and develop a high-performing team from pre-opening through ongoing operations
- Maintain brand standards across food preparation, cleanliness, and guest experience
- Manage labor, inventory, and cost controls to meet financial targets
- Ensure compliance with all health, safety, and food handling standards
- Play a critical role in the grand opening process, including hiring, training, and community engagement
Qualifications
- Previous General Manager or senior leadership experience in a restaurant environment
- Strong kitchen/culinary background (required)
- Proven ability to lead teams in high-volume or fast-paced environments
- Bilingual (English/Spanish) strongly preferred
- Highly organized with strong attention to detail and operational discipline
- Passion for hospitality, food quality, and building team culture
