- Prepare sushi, sashimi, rolls, and related menu items according to established recipes and standards
- Ensure food quality, freshness, and presentation meet Hyatt brand expectations
- Safely handle and store seafood and ingredients following food safety guidelines
- Set up and maintain the sushi station for service, ensuring cleanliness and organization
- Maintain proper knife care and workstation sanitation
- Communicate effectively with kitchen leadership and front‑of‑house teams
- Assist with inventory, prep work, and restocking as needed
- Follow all health, safety, and sanitation regulations

What We’re Looking For
- 2–3 years of professional sushi cooking experience required
- Strong knife skills and knowledge of sushi preparation techniques
- Experience working in a high‑volume restaurant or hotel kitchen preferred
- Understanding of food safety, sanitation, and proper seafood handling
- Ability to work efficiently under pressure while maintaining quality
