JOB SUMMARY
The Assistant Culinary Manager is responsible for ensuring directives given by the Culinary Administrator are followed. This position will assist with cooking, menu planning, ordering and the resident training program. Additionally, this position will assist in ensuring the kitchen is following the rules and regulations of the Health Department.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Prepare appropriate meals for assigned shift for Hope Haven residents as well as contract partners
- Responsible for correct food preparation and food handling
- Responsible for breakdown, clean up and food storage and/or disposal
- Assist the Culinary Administrator with overseeing an impactful training program for residents assigned to the main kitchen.
- Ensure residents are following related policies and procedures
- Assist Culinary Administrator and Executive Chef with food and supply ordering through appropriate vendors
- Monitor inventory and assist with conducting regular inventory counts
- Coordinate with Operations team to schedule routine facility inspections (i.e., fire safety, hood inspections)
- Ensure kitchen is kept clean and organized on day-to-day basis
- Attend all Hope Haven required meetings
- Be available and prepared for the health department and other inspections required by partner agencies
- Maintain compliance with agency policies, procedures, and standards, upholding organizational values and regulatory requirements.
- Perform other duties as requested by supervisor
KEY PERFORMANCE INDICATORS
- Ensure meals are cooked according to the menu for at least 90% of the month (document)
- All daily task lists are completed or documented reasons not complete
- Hold weekly food waste to a minimum, track daily and use leftovers within 3 days
- Maintain a minimum of 96 on the health department score
QUALIFICATIONS
- High School Diploma or equivalent
- 2 – 3 years’ experience in food service (or related) industry, required
- ServSafe Managers certification, required (or obtained within 30 days of hire)
- Experience in cooking for a large population, required
- Familiar with Health Department rules and regulations, required
- Leadership experience, preferred
- Must be a team player
