Job Summary:
This position is responsible for production, prep, set up and preparation of consistent quality products in all areas of the pastry department to include, but not limited to, pastries, desserts, breads, ice creams, sorbets, creams, etc., in accordance with departmental quality standards and specifications. Previous experience in pastry banquet and outlet production including prep, garnishing and finishing desserts by set time. Works in a clean and organized manner and conducts his or herself in a positive professional manner. This is a multi-faceted position that includes production work as well as working the pastry line at service for breakfast, brunch, lunch or dinner.
Job Responsibilities:
- Collaborate: Communicate proactively with Management and the Pastry Team during all shifts. Be comfortable asking for help and working as part of a team.
- Follow Procedures: Adhere to established recipes, procedures, and guides, including assembly, equipment SOPs, weights and measures, and sanitation guidelines.
- Meet Production Goals: Ensure timely completion of orders while maintaining high standards of quality, consistency, and established standards.
- Maintain Cleanliness: Keep a sanitary, organized work environment at all times.
- Storage and Shelf Life: Monitor proper storage and shelf life for all products.
- Health & Safety Compliance: Follow all appropriate health and safety regulations, food safety guidelines, and cleanliness requirements.
- Baking Equipment: Use kitchen tools and equipment, including mixers, dough sheeters, and ovens, efficiently and safely.
- Quality Control: Monitor baking processes to ensure products meet quality standards and make necessary adjustments as needed.
- Work with Purpose: Approach tasks with a sense of urgency to meet daily, weekly, and long-term production goals.
- Other Duties: Perform additional tasks as assigned by the Pastry Chef based on the business’ needs. description
Requirements
- Experience: Minimum of two (2) years of baking or pastry experience in a hotel, resort, or upscale restaurant is preferred. Culinary degree or formal pastry training preferred, but not required.
- Pastry Skills: Understanding of proper pastry methods, techniques, and industry standards. Experience producing a variety of pastries, cakes, dessert components, and specialty baked goods. Decorate and garnish desserts professionally for plated service and banquets.
- Food Handler Certificate: Food Handler Certificate required. Knowledge and application of food safety, sanitation, and HACCP principles.
- Passion for Baking: A strong interest in high-quality baked goods and the food industry.
- Time Management: Excellent ability to manage time and meet production deadlines efficiently. Plating and preparing orders in a timely manner on the line.
- Attention to Detail: A keen eye for detail, not only in preparing or plating desserts, but also in the organization of pastry storage areas, ingredients, and quality control.
- Schedule Flexibility: Lon’s at the Hermosa Inn is open 365 days a year, breakfast, lunch and dinner. Evening, weekend and holiday availability is a must.
- Communication: The pastry cook position works closely with the Pastry Chef, Sous Chefs, Restaurant Managers, servers and stewarding staff (bussers & runners), the banquets team, and the front desk to ensure exceptional food quality and seamless service to guests. Must contribute to a collaborative team environment and support Lon’s service and events through open communication and teamwork. Must be able to remain calm, positive, and professional in a fast-paced kitchen.
- Physical Requirements: Able to stand and walk for extended periods throughout the shift. Must be able to lift up to 25 lbs. frequently and up to 50 lbs. occasionally. Ability to bend, stoop, reach, push, pull, and perform repetitive motions. Ability to work in hot, cold, humid, and sometimes smoky kitchen environments.
