Overview
We are seeking a motivated and detail-oriented Kitchen Production Supervisor to oversee daily food production activities within our Dietary Department. Will be responsible for overseeing preparation, portioning, and cooking of foods, including special diets and short order cooking for residents, guest and personnel. The ideal candidate will possess strong leadership skills, mechanical knowledge, and a thorough understanding of food safety standards. This role is vital in ensuring efficient food manufacturing processes that adhere to regulatory compliance and uphold the highest quality standards.
Duties
- Supervise kitchen staff engaged in food processing, packaging, and sanitation to ensure smooth operations.
- Knowledgeable of Federal, State and facility’s rules, regulations, policies and procedures.
- Oversee the implementation of sanitation procedures to maintain a clean and safe food production environment.
- Coordinate daily production schedules, ensuring timely completion of food productivity while maintaining quality standards.
- Conduct mechanical inspections and troubleshoot equipment issues to minimize downtime and optimize productivity.
- Teach cooks and prep personnel to prepare, season, cook, and serve for assigned meal; ensure appropriate portioned servings according to portion control standards/spread sheets.
- Manage inventory levels of ingredients, packaging materials, and supplies, utilizing basic math skills for accurate stock control. Order food and supplies as required for daily menus.
- Ensure compliance with all safety regulations and promoting a safe work environment for all team members.
- Oversee and assist in catering events.
- Assist in menu planning.
Qualifications
- A minimum of 2 years supervisory experience in food service in a hospital, skilled nursing or other related facility. Education in quantity cooking and therapeutic diets.
- Must be ServSafe Certified
- In-depth knowledge of rules and regulations related to food sanitation and safety.
- Verbal and writing abilities necessary to communicate and work effectively with various levels of staff, residents, family members and the public.
- Knowledge of food and dietary equipment and maintenance.
- Excellent organizational skills with the capacity to manage multiple priorities efficiently.
- Strong math proficiency for recipe preparation, portioning, meal counts and inventory management.
- Able and willing to work flexible hours, such as during an emergency situation. Must be patient and tolerant toward staff, residents and family members.
