- SHIFT INFORMATION**\
- The kitchen is open 7 days/week.
- This position primarily works four 10-hour shifts per week,
- Shifts include**early morning (1:00 am - 11:00 am)**or**early
- Flexibility is required for sick and vacation coverage.
**Food Service Operations**
- Supervise and lead the inmate kitchen work crew, ensuring efficient
- Perform related work as required, contributing to the overall
- Oversee bulk meal preparations for inmates and jail staff,
- Keep a detailed inventory of food stock and supplies, ensuring
- Instruction and Training**\
- Assign tasks and provide clear explanations of work requirements,
- Consistently train and instruct inmates in food service and
- Make recommendations to the Food Service Supervisor regarding
- Quality Control**\
- Review and ensure the quality of work performed by inmates,
- Ensure proper preparation and delivery of meals to jail housing
- Ensure sanitation methods meet the standards set by the City-County
- Conflict Resolution**\
- Resolve conflicts among inmate workers, fostering a positive work
- Complete incident reports on inmate behavior issues, injuries, and
- Take necessary disciplinary actions when required.
- Menu Optimization & Special Diets Management**\
- Adjust menus considering quantities, recipes, preparation times,
efficient use of leftovers.
- Ensure special diets align with guidelines, are properly labeled,
- Flexibility and Security**\
- Work and maintain availability for all shifts, including evenings,
- Strictly control tools, ensuring proper tethering of dangerous tools
