It is the primary responsibility of the Cook - Chinese Specialty to assist the Executive Room Chef with the preparation of specialty menu items using specialized cooking techniques. All duties are to be performed in accordance with departmental and Treasure Island practices, and procedures.

Specific Job Functions:

Assume complete charge of specialty requests.
Maintain cooking standards and techniques.
Work all stations as required.
Perform proper procedures.
Ensure proper usage and rotation of all food items.
Check freshness and quality of food and presentation.
Maintain proper inventory levels.
Responsible for all food preparation and production.
Maintain safety and Health Department standards.

2 years experience with Specialty Chinese cooking required.
Possess a full knife set and advanced knife skills (cut, dice, mince and slice), extensive knowledge of product and presentation, extensive knowledge of large production kitchen equipment.
Basic mathematical skills.
Mandatory testing on restaurant menu knowledge (Information will be provided).
Ability to obtain a valid Health Card.
Communicate effectively in English, both verbally and written forms.
Professional appearance and demeanor a must.
