Duties
Lead kitchen operations, supervising staff to ensure smooth workflow and adherence to standards
- Manage inventory control, including ordering supplies, monitoring stock levels, and minimizing waste
- Maintain strict food safety sanitizing procedures and uphold hygiene standards across all kitchen areas
- Oversee food production processes, ensuring consistency in taste, presentation, and portion sizes
- Collaborate with the culinary team on menu planning, special event catering, and seasonal offerings
- Train and mentor junior kitchen staff to develop their skills in food preparation and service excellence
Requirements
- Proven experience in sushi preparation and Japanese cuisine within a restaurant or fine dining setting
- Demonstrated supervising or team management experience in a culinary environment
- Knowledge of food safety protocols, sanitizing procedures, and HACCP standards
- Strong background in food production, catering, and restaurant management practices
- Ability to handle inventory management efficiently and control food costs effectively
- Excellent leadership skills with the ability to motivate and manage a diverse team
- Experience with banquet service, shift management, and catering operations is highly desirable
