POSITION SUMMARY:
Under general supervision, the Line Cook accurately and efficiently cooks meats, fish, vegetables, soups, and other hot food products as well as prepares and portions food products prior to cooking. Also performs other duties in the areas of food and final plate preparation. This includes plating and garnishing for all menu item plates. Prepares a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, etc.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
The following duties represent the core responsibilities of a Line Cook. Other related duties may be assigned consistent with the nature of this role.
- Assumes responsibility for the quality of products served.
- Effectively manages orders as they come in to ensure that all orders are delivered in a timely manner.
- Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
- Portions food products prior to cooking according to standard portion sizes and recipe specifications.
- Maintains a clean and sanitary workstation area, including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration equipment.
- Prepares items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning, and/or marinating.
- Follows proper plate presentation and garnish setup for all dishes.
- Assures food preparation and food storage areas meet health and safety standards.
- Assists in food prep assignments during off-peak periods as needed.
- Opens/closes the kitchen properly and follows the opening/closing checklist for kitchen stations.
- Assists others in closing the kitchen. This includes cleaning all workstations and taking care of leftovers.
- Adheres to all food-related safety practices set forth by Wilson Creek Winery & Vineyards, Inc., while also following all county, state, and federal regulations and standards.
- Attends all scheduled employee meetings and brings suggestions for improvement.
QUALIFICATIONS:
- A minimum of 1–2 years’ experience cooking in a restaurant.
- In-depth knowledge of restaurant best practices and cooking methods.
- Possess strong knife skills and be able to operate basic kitchen equipment.
- Ability to read and follow cooking directions and recipes.
- Understanding and knowledge of safety, sanitation, and food handling procedures.
- Excellent communication and organizational skills.
- A keen attention to detail.
- Aptitude for multi-tasking and self-motivation.
- Must be able to work cooperatively and efficiently in a team.
- Ability to perform duties in a fast-paced environment.
- Food Handler’s Certification required (or willingness to obtain).

While performing the duties of this job, the employee will work in a commercial restaurant kitchen environment that includes equipment such as walk-in refrigeration units, commercial ovens, stovetops, and grills. Duties may require the handling of knives and other sharp or potentially hazardous kitchen utensils and appliances, and employees are expected to follow all applicable safety protocols. The employee is regularly required to stand and walk for extended periods; bend, stoop, turn, and reach; and use hands, wrists, and arms and other sharp or potentially hazardous kitchen utensils and appliances, and employees are expected to follow all applicable safety protocols. The employee must be able to communicate effectively and perceive auditory and visual cues in a dynamic environment. Employees may occasionally lift and/or move up 40 pounds. This position involves work in both indoor and outdoor environments where temperatures may fluctuate.
