Job Summary
We are seeking a dynamic and experienced Lead Cook to join our team at the Veterans of Foreign Wars (VFW) facility. In this vital role, you will oversee all aspects of food preparation, ensuring the delivery of high-quality meals that meet safety standards and culinary excellence. As a leader in our kitchen, you will coordinate menu planning, supervise kitchen staff, and uphold food safety protocols to create a welcoming environment for our members and guests. Your expertise in culinary techniques and high-volume food production will help us serve delicious, nutritious meals efficiently and consistently. Work will be mostly Thursdays from noon to 6 p.m., Fridays 3 to 9 p.m., Saturday evenings and possibly Sunday afternoons.
Responsibilities
- Lead the preparation and cooking of meals, ensuring adherence to recipes and presentation standards.
- Oversee daily kitchen operations, including food production, food handling, and sanitation procedures.
- Plan menus that cater to diverse dietary needs while maintaining variety and nutritional balance.
- Supervise kitchen staff, providing training on food safety sanitizing procedures, knife skills, and proper use of kitchen equipment.
- Manage inventory levels, order supplies, and ensure proper storage to minimize waste.
- Maintain compliance with food safety management systems and ensure all team members follow food safety protocols rigorously.
- Coordinate catering events or special meal services, ensuring timely delivery of high-quality dishes for large groups or events.
- Monitor high-volume production processes such as boiling shrimp, deep frying , grilling, and food preparation techniques suitable for a busy kitchen environment.
Requirements
- Delaware Food Protection Manager's certification.
- Strong background in menu planning, recipe adherence, and meal preparation for large-scale operations.
- Extensive knowledge of food safety standards, sanitizing procedures, and food handling regulations.
- Skilled in operating various kitchen equipment such as ovens, grills, fryers, mixers, and knives with precision and safety.
- Demonstrated ability in fine dining or restaurant experience is a plus; experience with catering or high-volume production is highly desirable.
- Excellent leadership skills with the ability to train staff on culinary practices and maintain a positive team environment.
- Ability to work efficiently under pressure while maintaining attention to detail in a fast-paced setting.
