Lead Cook
Port & Pasture Food Truck
Position Summary
Port & Pasture is seeking an experienced, dependable, and organized Lead Cook to oversee daily food preparation and kitchen operations in our fast-paced food truck. The Lead Cook is responsible for preparing high-quality food, maintaining cleanliness and food safety standards, managing prep and inventory, and ensuring every guest receives an exceptional dining experience.
This position requires someone who thrives under pressure, takes pride in their work, and can lead by example while maintaining consistency and efficiency during service.
Primary ResponsibilitiesFood Preparation
- Complete all daily prep before service according to recipes and prep lists.
- Prepare sauces, dressings, batters, vegetables, proteins, and other menu components.
- Portion ingredients consistently for quality and cost control.
- Rotate and label products using FIFO (First In, First Out).
- Monitor freshness and quality of all ingredients.
Cooking & Service
- Prepare menu items accurately and efficiently during service.
- Maintain consistent food quality, presentation, and portion sizes.
- Manage multiple tickets while maintaining speed and accuracy.
- Communicate with team members to ensure smooth workflow.
- Maintain clean cooking stations throughout service.
- Ensure all food is cooked to proper temperatures and health department standards.
Kitchen Operations
- Open and close the kitchen according to established procedures.
- Maintain a clean, organized, and sanitary kitchen at all times.
- Wash dishes, utensils, cutting boards, and cooking equipment throughout the shift.
- Clean grills, fryers, prep areas, refrigeration units, and floors daily.
- Take out trash and recycling as needed.
- Follow all local health department regulations and food safety practices.
Inventory & Ordering
- Monitor inventory levels and communicate product needs.
- Assist with ordering food, paper products, and kitchen supplies.
- Receive deliveries and properly store products.
- Help minimize waste and control food costs.
Leadership
- Maintain a positive, professional attitude while creating a supportive team environment.
- Communicate equipment issues or maintenance needs promptly.
Qualifications
- Minimum 2 years of professional cooking experience (food truck experience preferred).
- Strong knowledge of food safety and sanitation practices.
- Ability to work efficiently in a small, fast-paced kitchen.
- Excellent organizational and multitasking skills.
- Reliable, punctual, and self-motivated.
- Ability to lift up to 50 pounds.
- Ability to stand for extended periods and work in varying weather conditions.
- Current Food Handler Certification (or ability to obtain upon hire).
Preferred Skills
- Experience with fryers, flat tops, and commercial kitchen equipment.
- Strong knife skills.
- Inventory management experience.
- Ability to maintain food cost and portion control.
- Positive attitude and excellent communication skills.
Schedule
- Full-time or part-time, including evenings, weekends, holidays, and special events.
- Flexibility to assist with catering events.
