Job Summary
Tuscan Brands seeking a dependable and detail-oriented Bread Maker to join our commissary bakery team. This position is responsible for preparing, mixing, shaping, proofing, baking, and packaging a variety of artisan and traditional breads while maintaining the highest standards of quality, consistency, food safety, and sanitation. The ideal candidate has a passion for baking, strong attention to detail, and the ability to work efficiently in a high-volume production environment.
Key Responsibilities
- Prepare and mix dough according to standardized recipes and production schedules.
- Measure and scale ingredients accurately to ensure product consistency.
- Operate commercial mixers, dividers, rounders, proofers, sheeters, ovens, and other bakery equipment.
- Shape, proof, score, and bake a variety of breads, rolls, buns, and specialty bakery products.
- Monitor fermentation, proofing, and baking times to ensure product quality.
- Inspect finished products for appearance, texture, weight, and quality standards.
- Follow production schedules to meet daily order requirements and delivery deadlines.
- Package, label, and prepare products for distribution to retail locations or customers.
- Maintain cleanliness and sanitation of workstations, equipment, and production areas in accordance with food safety regulations.
- Monitor ingredient inventory and notify supervisors of supply needs.
- Follow all company food safety, HACCP, OSHA, and sanitation procedures.
- Assist with receiving, storing, and rotating ingredients using FIFO (First In, First Out) inventory practices.
- Work collaboratively with bakery team members to maintain production efficiency and quality.
Required Experience
Experience with one or more of the following:
- Commercial bread production
- Artisan and specialty breads
- Dough mixing and fermentation
- Proofing and baking operations
- Commercial bakery equipment
- High-volume food production
- Food safety and sanitation procedures
- Packaging and labeling bakery products
- Inventory rotation and ingredient handling
Qualifications
- High school diploma or GED preferred.
- Previous commercial bakery, commissary, food production, or restaurant baking experience preferred.
- Knowledge of bread production techniques, fermentation, proofing, and baking processes.
- Ability to follow recipes, production schedules, and quality standards consistently.
- Basic math skills for measuring, scaling, and recipe adjustments.
- Ability to safely operate commercial bakery equipment.
- Flexible schedule, including early mornings, weekends, and holidays as needed.
Pay: $22.00 - $25.00 per hour
