REPORTS TO: Buffet Supervisor, Sous Chef and EVS/Steward Manager
RESPONSIBILITIES:
- The Steward Supervisor is responsible for the flow of stewarding activity in the kitchen, dining area and bars.
- Hire, train and evaluate dish, pot and cleaning staff and coordinate sanitary maintenance of physical plant, service wares and equipment in all kitchens and bars.
- Develop, appraise and coach personnel for improvement as appropriate.
- Orients and trains stewarding personnel in property and department policies and procedures.
- Supervise, coordinate and participate in the activities of stewards and other kitchen personnel engaged in maintaining sanitation and safety standards.
- Maintains an open and welcoming atmosphere that promotes skill enhancement.
- Holds crewmembers accountable for standards which have been set by the department.
- Maintains inventory levels of all china, glass, flatware, chemicals and all supplies associated with department needs.
- Estimates supply consumption and ordering of cleaning supplies.
- Monitors removal of all trash from kitchens to the appropriate receptacles.
- Maintains clean and safe conditions around dumpster area as well as the area around the grease receptacle.
- Provide ideas and suggestions for new products, services, technology and process.
- Utilize staff to assist in the set up and breakdown of special events around the property.
- Assists in implementing ongoing training programs for dishwashing, maintenance, sanitation and safety.
- Keeps up-to-date with knowledge of (and use of) chemicals and electrical equipment used in the department.
- Trains all subordinates on all MSDS sheets, updates and manuals.
- Oversees cleanliness, service and productivity standards for all areas on a daily basis and coordinates training programs to achieve standards.
- Ensures a safe work environment for all crewmembers through compliance with established guidelines: identifies and takes action to address safety hazards and reports such to Risk Management.
- Present during high volume shifts to include nights, weekends and holidays.
- Performs other duties as assigned to support the efficient operation of the department.
EDUCATION AND SKILLS REQUIRED:
High school diploma or equivalent minimum of 2 years as a Steward Supervisor in a similar resort/casino setting.
LICENSE / PERMIT REQUIREMENTS: Serv Safe certification is a plus.
PHYSICAL REQUIREMENTS:
- Speak clearly and listen attentively to all crewmembers and guests.
- Stand and exert well-paced mobility for periods up to four hours in length.
- Lift pots, pans, etc., up to 40 pounds in weight.
- Read and write to facilitate the communication process.
- Excellent organizational skills.
