Chef Trail 87 | West Dover, VT (near Mount Snow) Full-time, year-round, on-site.
About Trail 87: A modern American restaurant near Mount Snow in West Dover, Vermont. We cook seasonal, Vermont-sourced food and run through real swings: winter peak, slow mud season, busy summer and fall. We need a chef who keeps the kitchen sharp through it all.
The Role: You run the kitchen: the line, the prep, the schedule, the ordering. This is a hands-on leadership job; you lead from the kitchen pass, not from behind a desk. You'll work directly with management. 5 days a week (Thursday–Monday), with hours shifting for the winter season. Expect doubles on holidays.

- Food and labor costs: you partner with management to hit the margins that keep the restaurant thriving.
- Hiring, training, and leading the BOH teams.
- Health, safety, and ServSafe compliance.
What We're Looking For
- 3 years as a head chef, sous ready to step up, or kitchen manager with real ownership of a kitchen.
- A track record of running a kitchen that makes money, not just good food.
- Calm, steady leadership on busy nights and on any other day, ski-town Saturdays are no joke.
- Seasonal/local sourcing experience a plus.
- ServSafe certified or able to certify quickly.
- Reliable transportation; West Dover is rural, and winter commuting can be challenging. If the restaurant is open, you are expected to be there.
