Sous Chef - Slate Bistro & Bar
Position Summary
The Sous Chef plays a key leadership role in the daily operations of Slate Bistro & Bar's kitchen. This position supports the Thompson Golf Group Corporate Chef in executing high-quality, consistent food while maintaining kitchen standards for safety, cleanliness, and efficiency. The Sous Chef leads by example, helps develop the culinary team, and ensures a positive, professional kitchen culture.
Key Responsibilities:
Kitchen Operations
- Assist the Executive Chef with daily kitchen operations, prep, and service execution
- Ensure consistent food quality, presentation, and portion control
- Oversee line execution during service and step in as needed to maintain flow
- Assist with menu execution, specials, and seasonal offerings
Team Leadership & Training
- Supervise and support kitchen staff, fostering teamwork and accountability
- Train new hires and coach staff on recipes, techniques, and kitchen standards
- Lead shifts in the Executive Chef's absence
- Promote a respectful, professional, and efficient work environment
Food Safety & Sanitation
- Enforce all food safety, sanitation, and health department standards
- Ensure proper food handling, storage, labeling, and temperature controls
- Maintain a clean, organized, and safe kitchen at all times
Inventory & Cost Control
- Assist with inventory management, ordering, and receiving
- Help control food costs, waste, and portioning
- Monitor product quality and vendor deliveries
Standards & Compliance
- Follow all Slate Bistro & Bar and Thompson Golf Group policies and procedures
- Ensure compliance with labor, safety, and company standards
Qualifications
- 2–4 years of kitchen leadership experience preferred
- Strong culinary skills with experience in high-volume or upscale casual dining
- Knowledge of food safety standards and kitchen best practices
- Ability to lead, train, and motivate a diverse team
- Strong communication, organization, and time-management skills
- Flexible schedule, including evenings, weekends, and holidays
Physical Requirements
- Ability to stand for extended periods
- Lift up to 50 lbs
- Work in a fast-paced, hot kitchen environment
