Taste Management Group is seeking a HEAD CHEF to lead our Dancing Marlin kitchen team. We are in pursuit of a serious culinary professional having Head Chef experience who possesses strong cooking skills and who can skillfully lead a team in an open kitchen. We are a growing company and the ideal candidate will interface directly with management team.
Requirements:
- 4-6 years of Chef / Head Chef experience
- The ability to run a chef-driven, “from scratch” kitchen
- Strong working knowledge of BOH systems, ordering, inventory, and financials
- Experience with all kitchen functions including: 1) food purchasing and inventory management; 2) menu development; 3) preparation and maintenance of quality standards; 4) sanitation, safety and cleanliness; 5) training and supervision of employees in methods of cooking, preparation, plate presentation, portion and cost control.
- Knowledge of cutting-edge culinary trends and the local dining scene
- Skilled in leadership and developing teams based on mutual respect
- Experience with brunch, catering and private events is an asset
- Dancing Marlin is a popular neighborhood restaurant in Frankfort, Illinois that features a seasonally changing, “from scratch” menu. We highlight an American-themed cuisine that is diverse but features seafood. Drink menus feature tap wines and craft cocktails.

POSITION SUMMARY:
Responsible for assisting with the creation and maintenance of all menus and recipes used in the restaurant, and for the purchasing, preparation, presentation, and service of these menu items. Hire, train, supervise and develop a culinary staff. Work with the general manager in setting the direction of the business in day-to-day operations and to help the executive team grow the business, drive sales, and manage costs. Work with the management team on all financial aspects of the Back of House.
