The Fort Worth Club is seeking a skilled Artisan Butcher / Meat & Fish Fabricator who takes true pride in precision, yields, and raw material mastery. The Opportunity

Working directly alongside our Executive Chef and culinary leadership, you will oversee all protein fabrication for our high-end à la carte dining, lavish banquets, and exclusive private events. You will serve as the primary guardian of our walk-in coolers and protein inventory, ensuring every cut meets our uncompromising Platinum Standards.

Key Responsibilities

  • Precision Fabrication: Expertly break down, skin, debone, fillet, trim, and portion premium proteins—including whole salmon, sides of mahi, halibut, subprimal beef cuts, poultry, and game—to exact menu specifications.
  • Yield & Quality Optimization: Maximize utilization, control portion consistency, trim excess for custom grinds, and minimize product waste across all banquet and à la carte lines.
  • Stock & Sauce Foundation: Craft rich veal, chicken, and aromatic stocks to serve as the baseline for high-level kitchen execution.
  • Cooler & Inventory Mastery: Take full ownership of protein storage, labeling, dating, and product rotation (FIFO) while strictly adhering to food safety, temperature, and sanitation protocols.
  • Artisanal Sanitation: Keep the fabrication station, specialized tools, and processing equipment immaculate, organized, and inspection-ready at all times.
  • Team Synergy: Maintain active communication with the Executive Chef, Sous Chefs, and line cooks regarding yield reports, inventory availability, and product quality.

What We’re Looking For

  • Elite Knife Skills: Exceptional fundamental knife work and demonstrated mastery of both meat butchery and fine seafood fabrication.
  • Product Knowledge: Ability to immediately assess protein quality, freshness, fat scoring, and proper storage conditions.
  • Operational Discipline: Strong command of food yields, portion economics, and precise cross-utilization techniques.
  • Professional Standards: High attention to detail, strong work ethic, punctuality, and pride in maintaining a clean, orderly workspace.

Education & Experience

  • Preferred: 2–3 years of dedicated butchery, meat fabrication, or seafood preparation experience in a professional kitchen, specialty butcher shop, fine-dining restaurant, steakhouse, or luxury hotel.
  • Private club or high-volume fine-dining experience is a distinct advantage.

Schedule & Hours

  • Shifts: Monday–Saturday (typically 8–9 hour shifts between 7:00 AM and 9:30 PM).
  • Flexibility: Hours adapt based on private event schedules, club banquets, and culinary operations. Occasional holiday work required.
  • Work-Life Balance: The Club is closed every Sunday.
