Position Summary
The Assistant Kitchen Manager is the right hand to the Kitchen Manager, responsible for executing a high-volume BBQ kitchen with consistency, speed, and strong cost control. This role owns day-to day line execution, smoker coordination, prep systems, and team performance.
You are a working leaderon the line, on the pass, and in the numbers.
Core Responsibilities
Smoker & BBQ Execution
- Manage daily smoker production (brisket, pork, ribs, chicken)
- Ensure proper cook times, temps, rest periods, and yields
- Maintain consistency in bark, tenderness, smoke profile, and moisture
- Forecast production based on sales trends
- Oversee slicing, holding, and retherm procedures
Line Execution & Speed
- Run expo or key stations during peak hours
- Maintain ticket times (goal: 1015 minutes)
- Ensure plates are consistent and high quality
- Eliminate bottlenecks during service
Prep & Production Systems
- Build daily prep lists based on pars and sales mix
- Manage batch prep (sides, sauces, proteins, rubs) - Ensure proper yields and portioning
- Control overproduction and waste
Team Leadership
- Train cooks on BBQ technique and station execution
- Hold team accountable to standards
- Assist with hiring and onboarding
- Lead with urgency and professionalism
Cost Control & Profitability
- Enforce portion control
- Track and reduce waste
- Assist with inventory and ordering
- Maintain target food cost %
Cleanliness & Food Safety
- Maintain a clean and organized kitchen
- Enforce labeling, dating, and FIFO
- Ensure health code compliance
Key Systems
- Smoker logs - Daily prep sheets

Qualifications
- 25 years kitchen experience
- BBQ experience preferred
- Strong understanding of kitchen operations
- ServSafe preferred
