Manages daily food service operations for the assigned institution and may manage food service operations for another facility in close proximity to the assigned institution and/or for a specialized unit operated on the institutions premises, requiring extensive coordination of food service preparation to ensure the appropriate and timely delivery of meals and snacks. Ensures compliance with Department of State Health Services (DSHS), United States Department of Agriculture (USDA), and TJJD regulations, standards, policies, and procedures. Plans, assigns, and supervises the work of a team lead food service manager and a team of cooks responsible for preparing meals and snacks. May oversee the supervision of or supervise the work of youth performing miscellaneous duties through participation in the campus work program. Work involves ensuring prescribed sanitation and safety rules are maintained, overseeing the preparation of or preparing manual and automated reports and reviewing such reports, and overseeing the preparation of and reviewing requisitions for food and other supplies. Trains staff and youth workers as needed. Collaborates with the institutions administrators and with the juvenile correctional officers to maintain security in the kitchen and dining areas. Works under minimal supervision with extensive latitude for the use of initiative and independent judgment. Required to work different shifts, weekends, and hours in excess of 40 hours a week as needed and is subject to being on call. May require occasional travel (e.g., for training). Essential Job DutiesManages daily food service operations to ensure compliance with DSHS, USDA, and TJJD regulations, standards, policies, and procedures. Coordinates the preparation of and reviews requisitions for food and supplies to ensure all supplies are available to meet TJJD standardized menu; prepares such requisitions as needed.Ensures the receipt and storage of food and supplies are in compliance with TJJD, DSHS and USDA standards.Ensures appropriate management of youth working in food services to assure the successful functioning of Food Services at the facility.Coordinates supervision of or supervises daily food preparation to ensure prompt and timely food preparation.Coordinates the preparation of and reviews daily Food Production Schedule for cooks to distribute workload appropriately and proportionally between cooks.Coordinates and conducts orientation and on the job training of cooks to ensure employees have a thorough knowledge of their job, facility, and TJJD policies and procedures.Coordinates and reviews documentation of daily meal counts to ensure National School Lunch Program/School Breakfast Program requirements and TJJD procedures are met.Ensures food service equipment is clean and in good working condition to comply with TJJD and DSHS sanitation standards.Ensures appropriate maintenance of a file of food temperatures to comply with DSHS Lunch Program/School Brea fast Program, American Correctional Association, and TJJD standards.Ensures each youth receives the correct diet ordered to comply with physician and/or dentists orders.Collaborates with institution administrators and with the juvenile correctional officers maintaining security in the kitchen and dining areas; shares information, identifies concerns and trends, and recommends improvements to resolve problems or enhance operations.Plans, assigns, and oversees the work of supervised staff; promotes excellent performance and a positive working environment; hires and trains new staff; provides feedback and conducts performance reviews. Assists with the development of training materials and conducts training as directed.Assists with the development of policies, procedures, guidelines, and forms relevant to food service operations and in the development of plans to improve operations or to address areas of concern.Performs a variety of related duties not listed, to be determined and assigned as needed.Performs all duties in compliance with agency safety policies and procedures:Reports safety hazards and corrects hazards when possible.Completes required documentation in the event of an accident/injury within requested timeframes.Attends work on a regular and predictable schedule in accordance with agency attendance and leave policies. QualificationsHigh school diploma or equivalent. Two years experience as a TJJD Food Service Manager. Must be a certified food protection manager or obtain certificate within 60 days of hire.ORSix years of experience in food preparation service in a state institution, or the equivalent training and experience in a comparable commercial food service establishment or institution, with at least two of the required years of experience being in a team lead or supervisor position within such a setting.
