So, what will a Full Food Service- Supervisor do?
The
Full Food Service- Supervisor
coordinates the provision of food services to Vermont National Guard Army Mountain Warfare School Full Food Service. The Supervisor oversees one and up to two shifts each day (Breakfast, Lunch, or Dinner). The Supervisor oversees all aspects of meal production, service flow, and dining facility operations to ensure timely, high-quality meals in accordance with the PWS and Army Food Program standards. This role directs kitchen and service staff, monitors portioning, maintains food temperatures, and enforces ServSafe food-handling practices. The supervisor ensures compliance with all required training, including ServSafe certification, AT Level I, OPSEC, iWatch, and CTIP.
What does a typical day look like for a Full Food Service- Supervisor?
You Will
- Coordinate prep and line operations, maintaining sanitation, correcting deficiencies, and ensuring adherence to FDA Food Code, Tri-Service Food Code, and Vermont health regulations.
- Oversee lunch and dinner production to ensure meals meet menu standards, portion sizes, and serving timelines.
- Supervise kitchen and service staff, assigning tasks and monitoring performance throughout meal preparation and service.
- Enforce ServSafe food-handling practices, temperature controls, and sanitation requirements in compliance with FDA Food Code, Tri-Service Food Code, and Vermont regulations.
- Inspect serving lines, equipment, and dining areas to verify cleanliness, readiness, and uninterrupted service flow.
- Coordinate with the DFAC manager and cooks to resolve issues, correct deficiencies, and maintain quality control.
- Verify employee completion of required training (ServSafe, AT Level I, OPSEC, iWatch, CTIP) and maintain compliance documentation.
What qualifications do you look for?
You might be the professional we're looking for if you have:
- Possess ServSafe Manager certification.
- A minimum of 5 years of relevant experience including supervisory roles. Experience should include successful track record executing rotating, multi-day institutional menus (e.g., 14-day menu cycles) with strict adherence to meal components and portion standards.
- Proven ability to manage meal services of up to 100 meals per service in a high-tempo food service operation.
- Background supporting time-sensitive environments (military, training institutes, schools) requiring punctual, uninterrupted 1-hour meal service windows. Demonstrated compliance with Army Food Program standards, including AR 30-22, DA PAM 30-22, Tri-Service Food Code, TB MED 530, and FDA Food Code.
- Hands-on experience enforcing ServSafe-based food safety, temperature control, and sanitation protocols.
- Experience supervising progressive cleaning procedures in active dining facilities without disrupting patron flow.
- Knowledge of waste, recycling, and compost practices, especially in jurisdictions with state-mandated requirements.
- Experience leading staff in structured, schedule-driven environments with high expectations for consistency and reliability.
- Familiarity with managing personnel who require installation access, background checks, and mandatory training (ServSafe, AT Level I, OPSEC, iWatch, CTIP).
