About the Role
The Food Services Supply Chain Manager is responsible for sourcing, purchasing, and managing the supply chain of food, beverages, and kitchen supplies to ensure the restaurant operates efficiently, meets quality standards, and maintains cost control. This role is critical in aligning procurement strategies with menu needs, customer expectations, and operational goals.
The Food Services Supply Chain Manager is also responsible for negotiating costs for all food, beverages, and supplies for the restaurant. This role involves working closely with vendors, managing inventory, and ensuring that the restaurant operates with the highest quality products while maintaining budgetary constraints.
Key Responsibilities
Procurement Operations
- Oversee supply chain management for food, equipment, and consumables.
- Identify, evaluate, and onboard qualified suppliers for culinary ingredients, beverages, and kitchen equipment.
- Negotiate pricing, terms, and delivery schedules with vendors to secure the best value.
- Monitor stock levels, forecast needs, and ensure timely replenishment to avoid shortages or overstock.
- Optimize procurement processes, explore innovative sourcing methods, and adopt sustainable practices.
- Develop and implement purchasing strategies to ensure the best quality products are at competitive prices.
- Collaborate with kitchen staff and management to determine product needs and specifications.
- Ensure compliance with food safety and quality standards.
- Evaluate supplier performance and seek alternatives when necessary.
- Effectively handle restaurant-specific procurement challenges (e.g., perishable goods, seasonal demand, compliance with health codes).
- Implement sustainable sourcing and waste reduction initiatives.
Operational Excellence
- Monitor performance metrics (cost of goods, labor efficiency, customer satisfaction, compliance scores) and drive continuous improvement.
- Conduct quality checks on received goods to ensure compliance with food safety and quality standards.
- Maintain accurate purchasing records with pricing and inventory and track procurement cycle times.
- Report on KPIs such as cost savings, inventory turnover, and supplier performance.
- Achieving targeted cost savings.
- Track and maintain optimal inventory turnover rates.
- Ensure 100% compliance with quality and safety standards.
- Track procurement cycle times and supplier performance aiming to reduce and improve them.
- Analyze data and make informed purchasing decisions.
Financial & Contract Management
- Analyze spending, identify savings opportunities, and implement cost-saving initiatives.
- Evaluate market trends and adjust purchasing strategies accordingly.
- Work with kitchen staff, chefs, operations managers, and finance to align procurement with operational and budgetary needs.
- Assess and improve supplier performance, resolve disputes, and maintain strong relationships.
- Negotiate vendor contracts and agreements with suppliers and vendors.
- Analyze sales trends, customer preferences, and market conditions to identify opportunities for growth.
- Collaborate with Business Development teams on RFP responses and client presentations.
Qualifications
- Bachelor’s degree in business, supply chain management, or a related field.
- A minimum of 3-5 years of experience in purchasing or procurement within the restaurant or food service industry is preferred.
- Strong knowledge of institutional food service regulations, procurement, market trends, restaurant operations and compliance requirements.
- Exceptional communication, and relationship management skills with the ability to negotiation and manage contracts.
- Detail-oriented with strong organizational and time management skills.
- Ability to work under pressure and meet tight deadlines.
- Knowledge of inventory management software and procurement systems and Microsoft Suite.
