Every taco starts with the tortilla. For us, that's not an afterthought, it's the whole point. We're looking for a dedicated baker to handcraft our signature plantain tortillas, the thing that sets us apart from every other taco spot in town.
This isn't a job on a chaotic restaurant line. We'll give you your own bakery space, connected to the restaurant but separate from the noise. Your music, your podcast, your rhythm. Just you, quality ingredients, and the satisfaction of making something the same way, every time, really well.
The Schedule Works Around You
Most jobs hand you a schedule. We hand you the keys.
You'll work 25–35 hours a week (give or take, depending on the season) and build your own schedule (within Taco Billy's hours). We freeze our tortillas after baking, so there's no daily deadline hanging over you, as long as you keep our inventory stocked at par level, you have real freedom in how you structure your week.
What You'll Be Doing
- Handcrafting our signature plantain tortillas, batch after batch
- Following recipes precisely, so every tortilla tastes like the last
- Keeping our inventory stocked at par level
- Keeping your bakery space clean and organized
- Tracking ingredient stock and flagging low supplies before they run out
- Following food safety and sanitation standards
Who We're Looking For
- Some baking experience. Professional or self-taught, either works
- Someone who finds satisfaction in routine, not someone who needs constant change
- Self-motivated and reliable, even with no one looking over your shoulder
- Detail-oriented, with real pride in a consistent product
- Comfortable working independently, hours at a stretch, on your own
- ServSafe Certification
