Duties
- Prepare a variety of sushi, sashimi, and other Japanese dishes according to established recipes and presentation standards
- Maintain high standards of food safety and hygiene in all aspects of food handling and preparation
- Plan and develop menu items that highlight fresh ingredients and innovative techniques
- Ensure all ingredients are stored properly, rotated regularly, and used efficiently to minimize waste
- Collaborate with kitchen staff to coordinate meal preparation and ensure timely service during busy hours
- Uphold cleanliness of the sushi station, including equipment sanitation and workspace organization
- Assist in training junior kitchen staff on sushi preparation techniques, knife skills, and safety protocols
Skills
- Extensive experience in sushi preparation and Japanese cuisine, with a focus on authentic techniques
- Strong knife skills for precise slicing and presentation of fish and other ingredients
- Knowledge of food safety standards related to seafood handling and storage
- Proven ability in menu planning, ingredient sourcing, and portion control
- Experience working in fine dining or upscale restaurant environments
- Skilled in food preparation, cooking, and meal presentation with attention to detail
- Excellent food industry knowledge including catering, food service operations, and kitchen management
- Ability to work efficiently under pressure while maintaining high-quality standards
- Strong communication skills for effective teamwork and customer interaction when needed
