Responsibilities
- Prepare and assemble sushi, sashimi, and other Japanese dishes with precision and artistry
- Maintain high standards of food safety, cleanliness, and hygiene in all food preparation areas
- Plan menus that highlight fresh ingredients and innovative flavor combinations
- Ensure all food is prepared according to established recipes and presentation standards
- Manage ingredient inventory, including ordering and stock rotation to ensure freshness
- Collaborate with kitchen staff to coordinate meal preparation during service hours
- Uphold restaurant policies regarding food handling, sanitation, and safety protocols
- Assist in training junior kitchen staff on sushi preparation techniques and safety procedures
Skills
- Proven experience in fine dining or Japanese cuisine as a Sushi Chef or similar role
- Strong knife skills and proficiency in food preparation techniques specific to sushi making
- Knowledge of food safety standards and proper handling of raw fish and seafood
- Experience with menu planning, meal preparation, and catering services
- Ability to work efficiently under pressure in a fast-paced environment
- Excellent attention to detail for presentation and quality control
- Background in the food industry with restaurant experience preferred
- Culinary experience that demonstrates creativity, precision, and professionalism
- Familiarity with food service operations, including serving guests when necessary
