Sushi Chef

We are seeking an experienced Edomae Sushi Chef to join a Michelin-recognized omakase restaurant that has been recognized for seven consecutive years.

This is an opportunity to work alongside a passionate team dedicated to preserving the traditions of Edomae sushi while continuing to deliver one of New York City's premier omakase experiences. We're looking for a chef who takes pride in craftsmanship, discipline, and hospitality, and who is excited to grow with a team committed to excellence.

• Minimum 5 years of Edomae sushi experience
• Experience in a high-end omakase restaurant is required
• Strong fish fabrication and butchery skills
• Exceptional knife skills
• Deep understanding of Edomae techniques, including aging, curing, marinating, and rice preparation
• Ability to maintain the highest standards of cleanliness, organization, and consistency
• Professional demeanor and strong work ethic
• Japanese language skills are a plus

• Execute omakase service with precision and consistency
• Prepare fish, rice, and all accompanying ingredients to the highest standards
• Maintain impeccable organization and sanitation
• Ensure proper product handling, storage, and inventory rotation
• Collaborate closely with the chef and culinary team
• Deliver an exceptional guest experience through both craftsmanship and hospitality
