Position Summary & Responsibilities

Position Summary:

The Certified Dietary Manager is responsible for overseeing all aspects of food service operations for residents at the Kansas Veterans' Home. This role ensures meals are nutritious, compliant with federal, state, and facility regulations, and tailored to individual dietary needs. The position requires strong leadership in managing staff, maintaining adherence to sanitation and quality standards, and implementing procedures that promote regulatory compliance and resident satisfaction.

Job Responsibilities may include but are not limited to the following:

  • Lead and supervise food service supervisors and production staff to ensure compliance with facility, state, and federal regulations and standards.
  • Plan, coordinate, and monitor dietary operations, including task assignments, food distribution, and portion control, and workflow efficiency.
  • Develop, implement and maintain procedures and standards that support high-quality meal service and regulatory compliance.
  • Conduct and oversee routine daily dining observation, audits, and inspections to verify sanitation, safety, and quality standards.
  • Participate in recruitment, interview, and recommend hiring decisions for dietary staff; manage timekeeping, leave requests, and personnel records.
  • Collaborate with the Dietitian and interdisciplinary care team on resident nutritional assessments and care plans.
  • Review and approve menus, special diets, and food requests; monitor resident weight changes and provide nutritional consultation and recommendations.
  • Maintain records from inspections, surveys, and audits; evaluate food quality, staff performance, and resident satisfaction.
  • Ensure adherence to standardized recipes, menus, and production schedules and dietary guidelines to support consistency and nutritional accuracy.
  • Manage inventory, purchasing, budget considerations, including ordering food, supplies, and equipment; report equipment malfunctions and request maintenance or repairs as needed.

Qualifications

  • Licensing & Certification:
  • Certified Dietary Manager (CDM) credential required
  • Minimum Qualifications:
  • Two (2) years of experience in commercial or institutional cooking/management, including at least one (1) year in a supervisory or leadership role.
  • Be free from conviction of a criminal offense that prevents employment with the Kansas Veterans Home.
  • Preferred Qualifications: (May be used to screen candidates)
  • Experience in long-term care or healthcare food service operations.
  • Thorough knowledge of sanitation, safety, and regulatory compliance standards.
  • Experience in menu planning, nutritional assessments, and special diet management.
  • Strong leadership skills with the ability to oversee supervisors and food service staff effectively.
  • Proficiency in budgeting, inventory management, and supply ordering.
  • Excellent communication and collaboration skills.
  • Ability to maintain accurate records, conduct audits, and ensure compliance with inspection requirements.
  • Strong organizational skills with attention to detail and the ability to manage multiple priorities.
  • Post-Offer, Pre-employment Requirements:
  • Must take and pass a drug screening within 24 hours of being offered the position.
