What are the responsibilities and job description for the Special Diets Cook position at Springmoor Life Care Retirement Community?
Responsibilities Include:
- Plans individual cooking schedule so that all foods assigned to prepare will be properly cooked and ready at the appropriate time.
- Assembles items needed for preparation from refrigerators and storerooms.
- Follows standardized recipes and portioning procedures to prepare meats, gravies, casseroles, vegetables and desserts that require cooking.
- Tastes all food during preparation to ascertain if foods are seasoned and cooked correctly; makes adjustments to seasoning and cooking time as necessary.
- Merchandises foods to be served in the dining room and at special functions in such a way to make them attractive and easily served in standardized portions.
- Follows steam table diagrams to place foods into tray line; labels foods for tray line according to modifications.
- Serves foods throughout serving periods.
- Monitors tray line throughout serving periods to ensure that foods are available to replenish when needed without delay.
- Prepares leftover food for proper storage labeled with description of food and date.
- Schedules and prepares foods for special functions as planned and listed on the production sheets.
- Keeps cooking area in kitchen clean and orderly at all times, following outlined cleaning procedures.
- Performs related tasks as assigned.
2 - 3 years prior experience as a cook
Experience with special diets: example, pureed, soft to chew
Desire to continue learning and professional development.
Capacity to stand for long hours.
Thorough knowledge of food safety guidelines.
Excellent organizational, time management, and multitasking skills.
Level-headed with outstanding interpersonal skills.
Commitment to the production of high-quality outputs and excellent customer service.
Ability to work shifts, over weekends, and on holidays, as required.
