About the Role
Spiegelworld is looking for an Assistant Food & Beverage Manager to join our team at Absinthe at Caesar’s Palace in Las Vegas. The Assistant Food & Beverage Manager plays a critical role in delivering exceptional guest experiences across the Absinthe footprint, including the Green Fairy Garden, all bars, food truck (No Pants), Pier 17, and the Hallucinator. This role supports daily operations, drives service excellence, ensures compliance, and fosters a high-performing, collaborative team environment. The Assistant Food & Beverage Manager reports to the Food & Beverage Manager. This position pays $48,880 / year.
What You’ll Do
- Maintain a consistent and visible floor presence across the Garden and tent to ensure seamless operations and elevated guest experiences.
- Oversee execution of daily service, including Banquet Event Orders and special activations.
- Actively engage in our antiracist commitment and internal practices by participating in offered learnings, engaging in conversations around Equity, Diversity, Inclusion, and Accessibility, and helping us maintain a safe and welcoming workspace.
- Create a work environment which promotes teamwork, performance feedback, recognition, mutual respect, and employee satisfaction.
Operations & Guest Experience
- Lead by example to cultivate a culture of hospitality, accountability, and teamwork.
- Perform regular table touches and proactively resolve guest concerns before escalation.
- Identify opportunities to enhance the guest experience and support implementation of new initiatives.
- Maintain a hands-on presence on the floor with a focus on 'table touching' and bar engagement.
Team Leadership & Development
- Set clear service expectations and hold team members accountable for delivering best-in-class hospitality.
- Developing beverage knowledge and instilling excitement and passion for the program within the team.
- Lead pre-shift meetings to align teams on priorities, service standards, and operational updates.
- Support onboarding of new hires, ensuring completion of uniforms, parking, and required certifications.
- Provide ongoing training, coaching, feedback, and disciplinary action when necessary.
- Foster a respectful, inclusive, and harassment-free workplace in partnership with People & Culture.
- Act as a point of contact for employee concerns and resolve issues promptly and professionally.
- Confidently step into service roles (server, runner, bartender, utility porter) as needed to support the team during high volume or absences.
Compliance & Standards
- Ensure strict adherence to health, safety, and sanitation standards through routine floor inspections and immediate corrective action.
- Maintain working knowledge of union guidelines and ensure compliance with the Caesar’s CBA.
- Maintain working knowledge of Southern Nevada Health District food safety guidelines and ensure compliance.
- Complete and submit all required incident reports, injury documentation, and workplace records.
- Uphold and enforce all Standards of Practice for F&B roles.
Financial & Administrative Oversight
- Manage nightly cash handling procedures, including tip distribution and safe counts.
- Submit daily financial reporting, including sales reports, reimbursements, and receipts to finance and group sales teams.
- Maintain and update Toast POS systems to ensure operational accuracy.
- Conduct inventory counts, monitor supply levels, and execute weekly ordering processes.
Collaboration & Communication
- Partner with production teams on operational needs, repairs, and ongoing site improvements.
- Communicate effectively across departments to ensure alignment and execution of business goals.
- Participate in all required management meetings and contribute to continuous operational improvement.
- Gather, filter, and implement team feedback to improve processes and workplace culture.
- Other duties as assigned by your manager.

What You Bring
Required Qualifications
- OSHA 30 certification (or ability to obtain within 30 days of hire)
- Certified Food Protection Manager certification (or ability to obtain within 15 days)
- TAM and Sheriff’s card certifications (or ability to obtain within 15 days)
- Prior experience in food & beverage operations
- Flexible availability, including nights, weekends, and holidays
- Must have valid authorization to work in the United States
Preferred Qualifications
- Experience working in union environments, particularly within Las Vegas hospitality
- Familiarity with Toast POS systems
- Background in nightlife, high-volume, or experiential hospitality environments
- Bachelor’s degree in Hospitality, Hotel/Restaurant Management, or related field
