Smokin Fins is seeking a driven, hands-on Assistant Kitchen Manager to help lead our Heart of House (HOH) team in Twin Falls, Idaho. Working alongside the Kitchen Manager, you'll help drive food quality, consistency, safety, and efficiency on the line while developing into a stronger kitchen leader — all while delivering the high-energy, high-quality experience Smokin Fins is known for.
Key Responsibilities
- Support the Kitchen Manager in overseeing daily kitchen operations, including expo, prep, and line execution
- Help maintain consistent food quality, recipe adherence, portion control, and plate presentation standards
- Assist with inventory management, weekly counts, ordering, and COGS discipline
- Help ensure all food safety, sanitation, and cleanliness standards are fully met (ServSafe standards)
- Coach and mentor kitchen staff on the line; help foster a positive, high-performance HOH culture
- Step in to run shifts and manage the kitchen in the Kitchen Manager's absence
- Support scheduling efforts to align labor with business volume
- Help maintain equipment and ensure safe, clean operational workflows
- Assist with menu execution, rollouts, and specials alongside the Kitchen Manager and GM
- Uphold OTLRG's culture of athletic hospitality, teamwork, and continuous improvement
Qualifications
- 1 years in a kitchen leadership or lead-line role (Shift Lead, Sous Chef, or similar), full-service or scratch-kitchen experience preferred
- Solid culinary and operational fundamentals, with a willingness to learn scratch-kitchen processes
- Experience training or mentoring kitchen staff
- Working knowledge of food safety, sanitation, and regulatory compliance (ServSafe preferred)
- Strong communicator with good organization, time-management, and problem-solving skills
- Ability to lift up to 50 lbs, work on your feet for extended periods, and thrive in a fast-paced, high-heat environment
