What are the responsibilities and job description for the Lead Baker position at Small Batch Coffee?
Job Summary
We’re looking for a skilled, experienced baker who can manage daily bakery production at Small Batch Coffee. This is an early, hands-on role focused on running the day-to-day baking: handling morning bake-off, keeping production moving throughout the day, and prepping for the next morning so the bakery stays on schedule.
You’ll be the primary baker handling most of the daily output, working in coordination with the team. Support is available when needed, but you should be comfortable working independently and keeping production steady.
What you’ll do
- Handle morning baking: muffins, cookies, biscuits, biscotti, focaccia, and other daily items.
- Keep production moving throughout the day and restock the pastry case when needed.
- Follow recipes consistently and maintain quality across all baked goods.
- Manage oven timing, rotate trays, and check for proper doneness.
- Prep doughs, batters, and components for the next day.
- Keep the bakery area clean, organized, and DOH-compliant.
- Portion, label, and store ingredients and finished goods properly.
- Communicate when ingredients or supplies are running low.
- Work independently while staying aligned with the overall bakery plan.
Basic qualifications
- Significant baking experience required (scratch bakery, café, or pastry kitchen).
- Strong knowledge of doughs, batters, mixing, oven work, and production pacing.
- Comfortable handling daily production without constant direction.
- Excellent organization, timing, and attention to detail.
- Reliable and comfortable with early-morning shifts.
- Food handler certification (ServSafe or similar) preferred, or willingness to obtain upon hiring.
Preferred qualifications
- Experience with commercial mixers, ovens, and standard bakery equipment.
- Ability to maintain consistency and scale recipes when needed.
- Strong grasp of food safety, DOH standards, and proper storage.
- Ability to troubleshoot or adjust baking outcomes when necessary.
