What are the responsibilities and job description for the Regional Chef - K-12 Foodservice position at SFE - Southwest Foodservice Excellence?

Summary of Position:
As the Regional Chef, you will be responsible for oversight of all kitchen and culinary operations for the region while ensuring all environments are operating in a safe and sanitary manner. (S)he will prepare or direct the preparation of all district meals in accordance with company programs and guidelines. Train kitchen staff on various culinary techniques for food preparation while ensuring food quality, presentation, and service meets standards.
Qualification:
- B.A or B.S in Culinary Arts, Food Services/Management, or related field; OR Culinary Certificate with 2 years in a related position.
- Previous experience working in a K-12 School Food Service environment preferred.
- Minimum of 3 years of progressive culinary and/or kitchen management experience required.
- Prior experience working with high volume, multi-site foodservice operations, as well as catering, preferred.
- Solid understanding and passion for food and catering trends.
- Strong understanding and focus on food quality, sanitation/safety, production, food cost controls, and final presentation.
- Proficient with Microsoft Office including Word, Excel, and Power Point.
- Must have a ServSafe Certificate and/or a Food Handlers Card (if applicable).
Responsibilities:
- Supports and trains kitchen staff with culinary operations including but not limited to:
- Safe food handling, sanitation, production, and operation of all kitchen equipment in accordance with company standards.
- Compliance with USDA guidelines.
- Following recipes, production records, and completion of waste logs.
- Conduct quality assurance audits.
- Create and maintain regular cleaning and maintenance schedules for all kitchen equipment, work areas, and storage units while ensuring that kitchen staff adheres to maintenance schedules.
- Supervise, coordinate, and execute various culinary activities (i.e. demonstrations, taste testing, focus groups, etc.) and education initiatives.
- Assist with district caterings and special events.
- Partner with the Nutrition team to provide feedback on menus and promotions.
- Assists with ordering and inventory control of both food and non-food supplies – ensuring that product is available when needed.
- Ensures kitchen locations comply with all federal, state, and local health and sanitation regulations and procedures.
- Other duties as assigned.
- May require up to 80% travel within your region. (Must have valid Driver’s license and reliable transportation)
