Responsible for sausage, bacon, and other cured meats
In charge of understanding meats and various curing techniques/methods
In charged of daily checking and monitoring of cured meats
Oversee rotations of products, pars, and checklists as well as HACCP check and control
Working early in the morning and be unsupervised and able to achieve daily goals before restaurant is open
