POSITION SUMMARY
At San Pedro Fish Market, our Expeditor ensures the smooth and timely flow of orders from the kitchen to the
guest and is responsible to check plates and trays for accuracy and presentation. The Expeditor must be a strong
communicator with the unique ability to bring teams together to reach the common goal of providing our guests
with an unbeatable experience. All positions within our organization participate in a team-oriented style of work by
assisting one another to create a harmonious experience for the guest and a fun and exciting shift for each crew
member. All position responsibilities must be performed in accordance with city, state, federal and Company
policy.

ESSENTIAL DUTIES AND ACCOUNTABILITIES

Work Tasks:
• Manage the KDS screen, orchestrating the flow of plates and trays coming from the kitchen to the guest.
• Ensure all plates and trays are clean, presentable and properly garnished.
• Facilitate excellent communication between the kitchen and FOH crew.
• Ensure food is served in accordance with proper safety standards.
• Anticipate the guest’s needs and respond appropriately with a sense of urgency.
• Maintain appropriate sauce and garnish pars in accordance with the par sheet and business needs.
• Adapt to changing guest volume with a sense of urgency.
• Keep an immaculate expo station that is clean and clear of food and debris.
• Perform work tasks calmly and effectively under stressful conditions and multi-task efficiently.
• Promote an atmosphere of teamwork by assisting co-workers.
• Uphold the Company’s service standards and KOF Teamwork Responsibilities.
• Perform opening and closing duties, side work and ensure checklists are completed accurately.
• Follow company policies and procedures.
• Maintain a safe working environment for crew and guests.
• Comply with all city, state, federal and Company regulations, sanitation guidelines, and safety policies
and promptly report violations or concerns to the General Manager.
Qualifications
MINIMUM EDUCATION, KNOWLEDGE, SKILLS AND ABILITIES REQUIRED
EDUCATION AND CERTIFICATIONS
• High school diploma or equivalent, or relevant experience.
• Prior experience running Expo or relevant kitchen experience preferred.
• Bi-lingual (English/Spanish) highly preferred.
• Current Food Handler’s Card must be maintained.
KNOWLEDGE, SKILLS AND ABILITIES
• Ability to communicate professionally and effectively with others.
• Ability to read, write and comprehend English.
• Ability to read, interpret and understand an extensive variety of work-related instructions and documents
pertaining to Company operations, safety, finance, HR and payroll.
• Ability to effectively collaborate with others to reach common goals.
• Ability to use the Company’s timekeeping system and point of service system.
• Flexibility to work weekdays, weekends and holidays.
• Working knowledge of city, state and federal hospitality guidelines.
