POSITION SUMMARY
At San Pedro Fish Market, the Dishwasher must clean and prep food, prepare meals per our San Pedro Fish Market
recipes and work to attain the highest level of quality for our guests. Any member of the kitchen staff should enjoy
working in a busy restaurant environment with the capacity to take and follow direction and multi-task efficiently.
All position responsibilities must be performed in accordance with city, state, federal and Company policy.
ESSENTIAL DUTIES AND RESPONSIBILITIES
• Ensure that all dishes are properly washed, sanitized and stocked with minimal breakage.
• Operate an industrial Dishwasher.
• Empty and clean all trash receptacles.
• Wash glassware, trays and other tools by hand when necessary.
• Maintain a clean and organized dish storage area.
• Ensure cooler is organized and items are easily accessible.
• Provide support to the prep and Dishwasher and other kitchen staff when necessary.
• Clean up spills or broken glassware immediately.
• Perform opening, closing and side work ensuring that the opening and closing checklists are
accurately and efficiently completed.
• Adhere to all safety and sanitation procedures.
• Other duties as assigned by management.
MINIMUM EDUCATION, KNOWLEDGE, SKILLS AND ABILITIES REQUIRED
EDUCATION AND CERTIFICATIONS
• High School Diploma or equivalent.
• Bi-lingual (English/Spanish) highly preferred.
• Current Food Handler’s Card.
KNOWLEDGE, SKILLS, AND ABILITIES
• Strong knowledge of proper food safety/handling procedures, knife skills, garnishing, sautéing, grilling,
fish filleting and sea food preparation, and general food preparation.
• Working knowledge of commercial cooking equipment.
• Comfortable working within a team in a fast-paced kitchen environment.
• Ability to communicate professionally and effectively with others.
• Flexibility to work nights, weekends, holidays and overtime.
• Ability to read, write, and comprehend English.
• Ability to read, interpret, and understand an extensive variety of work-related instructions and
documents pertaining to Company operations, safety, finance, HR, and payroll.
• Basic computer skills, including Internet use, E-mail, and typing skills.
• Ability to use the Company’s timekeeping system and point of service system.
• Ability and willingness to learn and apply new work skill sets and concepts.
• Working knowledge of city, state, and federal hospitality laws and regulations.
