About the Role
Saffron Wholesale Bakery produces for restaurants, cafés, grocers, and businesses across the Charleston area. This is production baking: scratch batters, real volume, and a delivery schedule that does not move.
You'll bake sheet cakes, layers, and rounds every day, and the whole job comes down to consistency. Same height, same crumb, same bake, batch after batch. What leaves this kitchen gets finished and sold under our name, so a cake that runs short or bakes uneven costs us downstream.
The work runs on early starts, since wholesale orders leave the building before most kitchens open.
What You'll Do
Cake production
- Mix cake batters at volume to spec across our full range
- Scale and pan accurately so every cake comes out at consistent weight and height
- Bake through full oven loads while holding even color, rise, and crumb
- Cool, wrap, and store finished cakes correctly for handoff or freezing
- Prepare fillings, soaks, and components as production requires
- Level and prep cakes for downstream finishing
Process and schedule
- Run daily production against the order schedule and delivery windows
- Follow recipes and production sheets exactly, and flag when something is off
- Adjust for humidity, oven variation, and batch behavior without drifting from spec
- Prepare and manage mise en place for next-day production
Equipment
- Operate planetary mixers, depositors, rack and deck ovens, and blast chillers or freezers
- Monitor bake times, oven loads, and product quality through the run
Standards and inventory
- Maintain food safety, sanitation, and allergen control standards throughout production
- Keep accurate production records covering yields, waste, and shortfalls
- Track ingredient levels and communicate needs ahead of shortages
- Keep your station and shared equipment clean and organized
Required
- Professional bakery experience, with hands-on cake baking
- Ability to follow recipes and production sheets precisely and repeatedly
- Comfort working at volume without letting quality slip
- Understanding of how batters behave: leavening, mixing method, and bake temperature
- Reliable, on-time attendance. Production has a delivery deadline every day.
- Availability for early morning starts
- Ability to stand for extended periods, lift up to 50 lbs, and work in a hot kitchen
- Attention to detail and a clean, organized way of working
A plus
- Wholesale, commissary, or commercial production bakery experience
- Ability to scale recipes and troubleshoot a batch that isn't behaving
- Experience with sheet cake production at volume
- Working knowledge of fillings, buttercreams, and cake components
- ServSafe certification or HACCP familiarity
- Formal culinary or pastry training
- Scratch production, not thaw and bake
- Steady, predictable work with a clear daily finish line
- Your cakes go out under our name to accounts across Charleston
- Room to grow into lead baker as we expand the wholesale book
