What are the responsibilities and job description for the Sous Chef position at RedWater Restaurant Group?
- Sous Chef Job Summary :
Responsible for the general operation of staff functions relating to all food culinary programs on the property with a focus on all banquet and events food prep and execution with RedWater Event standards. This person works closely with the General Manager, Executive Chef, Events Manager, , Food and Beverage staff , Event Sales Manager. This Sous Chef role supervises and trains all kitchen staff to ensure a high standard of cleanliness and hospitality and great food quality and consistency. The Sous Chef must have a flexible work schedule working on an average of 50- 55 hours per week. The schedule consists of days, nights, weekends and holidays and will vary on a weekly basis.
Job Functions:
- Inspects staff to ensure that they are in proper and clean uniform.
- Adheres to on-going training programs.
- Adheres to all handbook policies and holds team members accountable.
- Ensures productivity of team members and all daily tasks completed in a timely fashion.
- Has knowledge of shift, daily, weekly, monthly and annual goals.
- Manages shift with cost effective approach.
- Creates a positive work environment for team.
- Responsible for staff opening and closing procedures.
- Has complete knowledge of all banquet event menus and spec and restaurant items and pricing/costing.
- Schedules personnel based on Performa and plans room set-up based upon anticipated guest counts.
- Ensures facility is clean, organized and well maintained on a daily basis.
- Attends and participates in weekly management staff meetings, as well as other service meetings as deemed necessary.
- Keeping up with current trends within the restaurant industry
- Continuous training on Executive Chef responsibilities for future advancement
- Inventory management and margin edge systems
- Ordering process with GFS and other vendors as outlined by RedWater
- Quarterly quality assurance audits by RedWater
- Annual health inspections
- Serv safe food manager / handler certified.
