Red Truck Bakery is seeking an experienced hospitality professional to manage the Marshall café. The cafe manager will operationalize the vision of the owners and leadership and contribute to this vision as well. The vision is aligned with Red Truck mission of using local food to connect and build community.

The café manager will be comfortable setting high operational standards, implementing systems to achieve these standards and holding the team accountable for maintaining standards through coaching and mentorship. Previous work experience will demonstrate the ability to achieve high quality results, top level proficiency with their craft and the desire and capability to teach and mentor.

Since the start of the bakery in 2009, Red Truck has risen to regional and national prominence for its iconic, award-winning baked goods. The bakery now encompasses two stores, two widely acclaimed cookbooks and nationwide shipping.

The Café Manager will oversee all of hospitality operations for the Marshall location of the bakery. The Café Manager’s responsibilities break down as follows:

Team Leadership:

· Provide positive leadership, direction, feedback to café team to ensure accountability and development.

· Craft weekly schedule (two weeks in advance), anticipating variations in business; balancing guest and staff experience with sales and labor targets.

· Motivate and inspire team members to achieve sales targets and deliver transformative guest experiences through formalized daily meetings and informal check-ins.

Staff Training and Development:

· Interview, onboard, train, hire and fire team members.

· Train new team members on store policies, procedures, and guest service expectations.

· Provide ongoing coaching and feedback to improve team member performance.

· Identify training needs and collaborate with the Regional Manager for development

Guest Experience

· Interface with guests; always seeking to be visible and part of the guest experience.

· Ensure the presentation of the product meets RTB standards.

· Coordinate with Regional Manager to ensure the guest experience is memorable and encourages return visits.

Sales Performance:

· Monitor and achieve sales targets for the shift, week, term and year.

· Implement in-the-moment strategies to increase efficiency and improve the guest experience.

· Analyze sales reports and customer feedback and take corrective actions to improve performance.

Beverage Program Management

· Oversee quality beverage program including espresso, drip coffee and tea.

· Train team members and oversee baristas to ensure consistent, quality production day in and day out.

· Monitor inventory of coffee and tea and work with Regional Manager to ensure adequate fresh product is on hand.

Inventory Management:

· Oversee inventory levels throughout the shift and coordinate restocking activities, ensuring pastry case, coolers, tables and retail shelves are fully stocked, clean and presentable.

· Coordinate with kitchen leadership throughout day to ensure timely availability of product.

· Conduct regular inventory checks and report discrepancies to Leadership.

· Conduct formal inventory count at the end of each term.

Cash Handling:

· Supervise all cash handling and ensure accurate and secure accounting of cash transactions.

· Count tills at open and close of business daily and report any discrepancies to Regional Manager.

Business Oversight & Development

· Will help maintain existing and develop new systems that ensure the most hospitable and efficient operation possible.

· Will monitor sales vis-à-vis targets and suggest adjustments to product mix, merchandising, staffing and scheduling to ensure the operation is profitable.

· Will play a key role in developing growth & expansion strategies.

Job Type: Full-time

Pay: $45,000.00 - $50,000.00 per year
