Raleigh Raw – Kitchen Prep / Prep Cook
Location: Downtown Raleigh, NC (7 W Hargett St)
Positional Vibe: Day shift, kitchen closes at 7 PM

What You'll Be Making:
- Smoothies (CBJ Time, Chocolate Banana, Green, Coladacado, etc.)
- Smoothie bowls (Khaleesi Acai, Blue Zone Smoothie Bowl)
- Avocado toast on gluten‑free sourdough with pickled onion & dill
- Poke bowls & sushirritos (Faroe Monch, Hustle, Rosarito)
- Cold‑prep elements: chopping, peeling, slicing fresh vegetables & toppings
- Seasonal soups (e.g. Tomato Basil Bisque, Coconut Corn Chowder)
Day‑to‑Day Responsibilities:
- Prep ingredients per checklists: smoothies, bowls, soups, toasts, poke bowls — weigh, measure, mix to spec
- Make housemade almond and coconut milks from scratch as needed
- Cold line prep: trimming, washing, cutting veggies and proteins
- Follow detailed prep & stock checklists; label and rotate inventory
- Maintain rigorous cleanliness — scrub, sweep, sanitize — kitchen looks as sharp as your knife skills
- Support dishout during busy periods: finishing bowls, plating toast, finishing soups
- Check and maintain stock levels, portion control to minimize waste
Must‑Haves (No Fluff):
- Knife proficiency and prep‑tool comfort
- Fast pace and accuracy under pressure
- At least 1–2 years experience in a commercial kitchen environment
- Passion for clean, health‑focused ingredients and wellness cuisine
- Willingness to pitch in on cleaning and kitchen upkeep
- Positive attitude—bonus if you bring your own playlist and jokes to the line!
Nice‑to‑Haves:
- Experience working with raw fish, foodie culture, poke or sushi prep
- Spanish speaker
- Familiarity with macro‑tracking or nutrition info (menus list carbs/fat/protein)
Pay & Perks:
- Typical pay range: $15–$18/hour, most starters at ~$15/hr; $1 raises every 90 days based on performance and reliability
- Overtime available year‑round
- Work ends early—kitchen shuts at 7 PM, so no late nights unless you volunteer for OT
