Responsibilities:
- Operate and maintain commercial dishwashing equipment to ensure all dishes, cookware, utensils, and glassware are properly cleaned and sanitized in accordance with health and safety standards.
- Maintain the dish room, kitchen support areas, floors, and equipment in a clean, safe, and orderly condition at all times.
- Store, transport, and distribute food, supplies, equipment, utensils, dishware, and glassware to Food & Beverage outlets as needed.
- Ensure all food products are handled, transported, rotated, thawed, and stored in a safe and sanitary manner following proper FIFO (First In, First Out) procedures.
- Maintain dry storage areas, walk-in coolers, freezers, and satellite freezer storage areas in a clean, organized, and sanitary condition.
- Ensure kitchen stations are stocked with appropriate freezer pulls while following proper thawing procedures and supporting production needs for all shifts.
- Maintain kitchen transport carts, racks, and storage equipment in a clean and sanitary condition.
- Assist with receiving deliveries by transporting food and beverage products from the receiving dock to designated storage areas after deliveries are verified.
- Keep the receiving dock and storage areas clean, organized, and free of excess product by ensuring deliveries are put away promptly.
- Assist with month-end inventory in accordance with Food & Beverage policies and procedures, including use of scanning equipment where applicable.
- Maintain accurate inventory counts of designated products as required by the Executive Chef or kitchen leadership.
- Assist kitchen staff with basic food preparation tasks when primary duties are completed, as directed by the Executive Chef or kitchen leadership.
- Promote a positive team environment and communicate effectively with supervisors and team members to support efficient kitchen operations.
- Provide courteous guest service when interacting with guests, including sharing information about Players Club benefits, property amenities, and marketing programs when appropriate, and perform additional duties as assigned.
WORKING CONDITIONS & ENVIRONMENT
- Work is performed in a fast-paced casino and hospitality environment.
- The work environment may include loud noise from gaming machines, music, and guest activity.
- Exposure to secondhand smoke may occur in designated gaming areas.
- Position requires standing and walking for extended periods of time.
- Must be able to lift and carry items weighing up to 60 pounds.
- Must be able to work all shifts including evenings, weekends, and holidays.
- Requires frequent interaction with guests, team members, and management in a high-traffic environment.
- Must be at least 21 years of age.
- Must possess a current Food Handler’s Card or obtain one prior to starting and maintain all required food safety certifications.
- Minimum six (6) months of experience in a kitchen or food service environment.
- Working knowledge of food safety practices, including time and temperature control, proper food handling, and the FIFO (First In, First Out) inventory rotation system.
- Basic understanding of OSHA safety regulations and applicable local, state, and federal health department guidelines.
- Experience with inventory control or product tracking preferred.
- Ability to communicate effectively in English, both verbally and in writing.
- Strong organizational skills, attention to detail, and ability to prioritize tasks in a fast-paced environment.
- Ability to work both independently and collaboratively within a team environment.
- Must demonstrate reliability, self-motivation, and strong work ethic.
- Must be willing to participate in training programs as required by the organization.
- Must have a Tribal Gaming License (or the ability to obtain and maintain a license) as a requirement for this position.
- Must be legally authorized to work in the United States.
- Must successfully pass a drug screening and criminal background check.
- Must adhere to all confidentiality and company policies, gaming rules and regulations
- Indian Preference will be observed in accordance with Tribal hiring policies.
The Dish Machine Operator (DMO) is responsible for maintaining cleanliness, sanitation, and operational flow within the Food & Beverage department by ensuring the timely cleaning, organization, and distribution of kitchen equipment, dishes, and supplies. This position plays a critical role in supporting kitchen operations by maintaining sanitary workspaces, assisting with product rotation, and helping ensure that food and beverage outlets are properly supplied with clean equipment and necessary materials.
