Overview
Ollie’s Azul House is an elevated taco and tequila concept located in the historic blue Oliver House in Rowlett. We are building a bar program rooted in premium agave spirits, refined cocktail execution, and confident, welcoming hospitality.
We are seeking a Bar Manager to lead the bar program while also serving as part of the restaurant’s leadership team.
This role is hands-on. You will be behind the bar, leading the team, and ensuring the bar operates at a high level. You will also step into a broader leadership role on the floor when needed, supporting overall operations in the absence of the General Manager.

Responsibilities
- Lead all bar operations including service, execution, and team performance
- Bartend during shifts while setting the standard for speed, consistency, and guest experience
- Train, coach, and develop bartenders and bar staff
- Oversee inventory, ordering, and product management
- Maintain organization, cleanliness, and professionalism behind the bar
- Ensure compliance with alcohol laws and responsible service practices
- Assist with scheduling and staffing for the bar team
- Step into a leadership role on the floor when needed, supporting service and operations
- Help maintain overall standards across the restaurant in coordination with management
Requirements
- 2 years of bartending experience in a full-service environment
- Prior leadership, keyholder, or management experience preferred
- Strong knowledge of cocktail fundamentals and bar operations
- Interest in tequila and agave spirits preferred
- Strong leadership presence and communication skills
- Ability to manage both bar responsibilities and broader operational needs
- Professional, composed, and accountable
- Availability for evenings and weekends
Preferred:
- Experience building or launching a beverage program
- Background in fine dining or upscale hospitality
- Strong inventory control and cost management experience
