Olive My Pickle is a fast-growing fermented food company. We make kraut, kimchi, pickles and fermented vegetables in Jacksonville and ship thousands of orders a week across the country.
We are hiring Team Members into two departments — Production and Packaging. Both start at entry level.
We are looking for people who want to grow. The right person learns every station in their department and, over time, becomes someone we can count on in a lead or supervisor capacity. We will invest in you if you invest in the work.

Growth path
Entry level Team Member → Team Member → Supervisor / Lead
Production — What the Department Does
Everything we sell starts here. Raw vegetables come in, and days or weeks later they leave our tanks as finished ferment. Nothing downstream happens until Production makes it.
What you would learn, in order:
- Produce receiving and prep — inspecting incoming vegetables, washing and preparing to spec, and rejecting anything that does not meet standard. We do not ferment our way out of bad produce.
- Brining and batch build — weighing product, mixing brine to the correct salt concentration, loading tubs. Our salt-by-weight process is governed by a Process Authority letter. The ratios are not adjusted on the floor.
- Fermentation and the cooler — different products ferment for different lengths of time, from five days for pickles to four weeks for some krauts. You learn which goes where and how long it stays.
- Recording — every batch is logged by product, pounds and tubs. If a batch is not logged it does not exist, and the plan downstream runs on those numbers.
- Sanitation — fermentation is a controlled process and it only stays controlled if the room does.
Packaging — What the Department Does
Packaging turns bulk ferment into a sellable pouch. Every unit that ships was filled, sealed, dated and crated by this team. It is the highest-volume department on the floor and it sets the pace for everything downstream.
What you would learn, in order:
- Packing — filling pouches to weight, by hand, at the pace the line needs. Every product has its own fill and its own crate count: kraut runs 40 to a crate, olives 62, pickles 30.
- Topping and sealing — brine level before sealing, then running and inspecting the seal. A bad seal is a leaker, and a leaker is a refund and a lost customer.
- Labels and dates — every pouch is labelled and date-coded. That is a food safety requirement, not a preference.
- Crating and the count log — finished pouches are crated and counted. The count is how the whole company knows what was made; it feeds the daily pack list and the quarterly plan.
- Running and stocking product — keeping every station supplied, and keeping product ahead of the line. You learn to read the floor rather than wait to be asked.
A Day in the Role
- Arrive, set up your station, and confirm you have what you need to run.
- Check the day's plan with your supervisor — it tells you what is short and what runs first.
- Work your assigned station to the standard, all shift. This is repetitive work done accurately.
- Record what you make as you make it. Do not leave logging to the end of the day.
- Follow food safety minimums at all times: hairnet, gloves, no food over product, covered drinks, handwashing.
- If something looks wrong — a short fill, a bad seal, a batch that looks off — stop and flag it. We would rather lose a crate than ship a bad one.
- Help with end-of-day close: cleaning, restocking, and anything your supervisor asks.
What We're Looking For
We are not hiring for a resume. We are hiring for attitude, reliability, and the willingness to grow. If you show up ready to learn and do the work, we will develop you.
Must-haves
- Reliable — you show up on time, every shift, ready to work.
- Coachable — you take direction, apply it, and ask questions when you are unsure.
- Honest — if something goes wrong or you make a mistake, you say so. In food production a hidden mistake becomes a recall.
- Careful with detail — weights, counts and times matter here. Close enough is not good enough.
- Team-first — our floor runs on teamwork. Nobody stands idle while others are working.
- Physically capable — lifting 50 lbs repeatedly, standing and moving all day, working in refrigerated and wet conditions.
Nice-to-haves
- Prior experience in food production, packaging, a commercial kitchen, or a manufacturing line.
- Comfortable with basic counting and record keeping.
- A track record of staying in a role and building skills over time.
Physical Requirements
- Ability to lift 50 lbs repetitively throughout the shift.
- Standing and moving for the duration of the shift.
- Working in and around refrigerated and wet environments.
- Steel-toe footwear required.
The Growth Path
This is not a dead-end job. We promote from within — every team lead, supervisor and manager in this company was hired at entry level and grew into the role, including the Director of Operations.
