What are the responsibilities and job description for the Sushi Assistant position at Nobu Malibu?
Job Summary
We are searching for an experienced Sushi Assistant to join our talented Sushi team and help prepare dishes according to our standard recipes. In this position, your goal will be to prepare high-quality meals that meet the Executive Chef’s exact specifications.
Duties
- Prepare components of each dish on the menu, prepare sushi rice, make sauces and make sushi dishes from menu.
- Collaborate with other departments – FOH and Kitchen
- Maintain cleanliness and comply with food sanitation requirements by properly handling food and ensuring correct storage
- Maintain complete knowledge of correct maintenance and use of equipment and safety standards
- Maintain and strictly abide by state sanitation/health regulations
Skills
- In-depth knowledge of restaurant best practices and cooking methods
Requirements:
- Willingness to adhere to health and safety rules
- The ability to work unsupervised in a busy environment
- Able to stand for long periods of time (8 hours)
- Able to walk up and down stairs
- Able to carry up to ~50lbs
- Able to push/pull/open doors
- Able to bend, squat and lean down
