Job Title: Head ChefLocation: Chubby TanReports To: General Manager / OwnershipPosition SummaryThe Head Chef at Chubby Tan is responsible for leading all kitchen operations, ensuring food quality, consistency, cost control, and team development. This role is hands-on, leadership-driven, and execution-focused. You set the tone of the kitchen — discipline, speed, and standards — every single service.Key ResponsibilitiesKitchen OperationsOversee daily BOH operations including prep, service, and closing proceduresEnsure all dishes meet Chubby Tan’s standards for taste, presentation, and consistencyMaintain smooth service flow during peak hoursDevelop and update prep lists, pars, and station setupsMenu Execution & DevelopmentExecute the existing menu with precision and consistencyCollaborate with management on menu updates, seasonal items, and specialsStandardize recipes, portion sizes, and plating guidesEnsure new menu items are costed, tested, and trainableTeam Leadership & TrainingLead, train, and mentor BOH staff (line cooks, prep cooks, dish team)Enforce kitchen discipline, cleanliness, and professionalismConduct onboarding and ongoing skills trainingBuild a culture of accountability, teamwork, and pride in the craftInventory & Cost ControlManage food inventory, ordering, receiving, and storageMonitor food costs, waste, and spoilageWork with management to meet food cost targetsConduct regular inventory counts and auditsFood Safety & ComplianceEnsure full compliance with health department regulationsMaintain high standards of sanitation and food safetyTrain staff on proper handling, storage, and cleaning proceduresBe inspection-ready at all timesQualificationsProven experience as a Head Chef or Sous Chef in Japanese Cuisine at least 3 yearsStrong understanding of BOH operations and high-volume serviceLeadership mindset with hands-on execution skillsAbility to train, motivate, and manage a diverse kitchen teamKnowledge of food costing, inventory systems, and prep planningAbility to stay calm and decisive under pressureWhat We’re Looking ForA chef who leads by example — not by yellingSomeone who respects tradition but isn’t afraid of smart innovationClean kitchen, clean systems, clean executionLong-term mindset: build the team, not just survive the shiftCompensation & BenefitsCompetitive salary (based on experience)Performance-based bonuses (if applicable)Growth opportunities within the Chubby GroupStaff meals and employee dining benefitsPlease message your resume with a brief introduction about yourself to Matthew at 702-738-6881.
